Spring packages
Spring Vegetable and Pastry Packages
When I need something quick for a light meal or a platter of appetizers, I often turn to these vegetable packages. They are simple, using ready-to-use pastry and basic vegetables that I usually have in the fridge. After a few tries, I found that they turn out best if I don't overfill each roll and let the vegetables sit with the seasonings before wrapping.
Quick Info
Total Time: about 35-40 minutes
Preparation Time: 20 minutes
Cooking Time: 15-20 minutes, depending on the pan and quantity
Servings: 4
Difficulty: easy
Recipe Type: warm appetizer or snack
Ingredients
1 package of puff pastry
1/4 zucchini
2 cabbage leaves
2 carrots
1 green onion
A handful of peas (frozen or fresh)
1 tomato
1 clove of garlic
Salt
Pepper
Paprika
Herbs de Provence
1 tablespoon olive oil
1 egg (for brushing the packages)
Oil for frying
Instructions
1. Take the puff pastry out of the fridge and let it sit at room temperature while you prepare the vegetables. It will be easier to work with and won't tear.
2. Peel the carrots and grate them on a large grater. Slice the green onion into thin rounds. Chop the tomato and garlic finely. Cut the zucchini into thin sticks, and shred the cabbage.
3. Place the grated carrots in a large bowl. Add the finely chopped cabbage, seasonings (salt, pepper, paprika, herbs de Provence), and olive oil. Include the green onion, tomato, garlic, zucchini, and peas. Gently mix so the vegetables don't get crushed. I prefer to let them sit for 5 minutes to blend the flavors, but it's not mandatory.
4. Roll out the pastry on a countertop and cut it into 4 rectangles as evenly as possible.
5. Place a small mound of filling on one edge of each rectangle, being careful not to overfill so they don't tear while frying.
6. Fold the side edges inward, then roll the package tightly, starting from the side with the filling.
7. Beat the egg with a fork and brush the edges before rolling to ensure they stick well.
8. Heat oil in a pan over medium heat. The oil shouldn't be too little, but it shouldn't completely cover the packages – just enough to have them half submerged.
9. Fry each package until they are nicely browned on both sides. Turn them gently to avoid tearing.
10. Remove them to a paper towel to absorb excess oil.
11. Serve warm, either plain or with a dipping sauce, as preferred.
Why I Make This Recipe Often
It helps me use up leftover vegetables or quickly prepare something filling without much effort. The recipe is easily adaptable based on what I have on hand, doesn’t require complicated techniques, and doesn’t create much mess in the kitchen.
Tips and Variations
Tips
- Don’t overload the filling; otherwise, the pastry will tear or won’t stay crispy while frying.
- If using frozen peas, quickly rinse them with warm water so they don’t cool down the filling.
- Let the vegetables sit with the seasonings for a few minutes to absorb the flavor.
Substitutions
- Zucchini can be replaced with bell pepper or yellow squash.
- Cabbage can be white or red.
- If you don’t have herbs de Provence, use dried parsley or a little thyme.
Variations
- You can add some crumbled feta cheese for a richer filling.
- Peas can be omitted if you don’t like them or don’t have them on hand.
- Instead of frying, you can try baking the packages, but the texture will be different from frying in oil.
Serving Ideas
- They are great as a warm appetizer but can also be a quick snack.
- They can be served with a simple yogurt and garlic sauce or with tomato sauce.
- They also pair well with a green salad.
Frequently Asked Questions
1. Can I freeze the packages before or after frying?
I don’t recommend freezing, as the pastry and vegetables won’t retain their proper texture after thawing and reheating.
2. What kind of oil do I use for frying?
I use vegetable oil with a high smoke point, usually sunflower oil.
3. Can I use leftover vegetables from another meal?
Yes, but only vegetables that haven’t been overcooked or are too watery.
4. Can I use phyllo dough instead of puff pastry?
Yes, but you will need to brush them with more oil or butter to prevent them from drying out.
5. How can I prevent the packages from coming apart while frying?
Seal the edges well with beaten egg and don’t put too much filling.
Nutritional Values
Estimate for 1 package (out of 4), fried:
Calories: approximately 240-280 kcal
Protein: 5-6 g
Carbohydrates: 24-28 g
Fats: 13-15 g
Values may vary depending on the type of pastry and how much oil is absorbed during frying. The recipe is moderate in calories for a fried appetizer, with a decent fiber content from the vegetables.
Storage and Reheating
They are best consumed fresh, immediately after frying. If leftovers remain, you can store them in the fridge for 1 day, but they will lose their crispiness. Reheat quickly in a dry pan or in the oven, not in the microwave, to avoid becoming soggy. Long-term storage is not recommended.
