The Carpathian Cake is not just a dessert; it is a sweet and aromatic memory of festive days, a symbol of joy and culinary tradition. With delicate layers of dough, a velvety cream of caramelized sugar and walnuts, covered with a shiny chocolate glaze, this cake is perfect for delighting carolers or bringing a touch of magic to any occasion. Though it may seem daunting, each step of its preparation is filled with satisfaction and joy.

Preparation time: 1 hour
Baking time: 40 minutes
Total time: 1 hour and 40 minutes
Number of servings: 16-20

Necessary ingredients:

*For the layers:*
- 3 eggs
- 300 g sugar
- 300 ml milk
- 300 ml oil
- 2 teaspoons of ammonium bicarbonate quenched with a tablespoon of vinegar
- Rum essence (a few drops, to taste)
- Flour as needed (approximately 1250 g)

*For the cream:*
- 1 kg sugar
- 250 g butter
- 2 l milk
- 13 heaping tablespoons of flour
- Rum essence
- 250 g ground walnuts

*For the glaze:*
- 300 ml liquid cream
- 250 g milk chocolate
- 2 tablespoons cocoa
- 2 tablespoons sugar

*For decoration:*
- 50 g ground walnuts
- 30 g grated coconut

Step by step to a perfect result:

1. Preparing the layers:
Start by preheating the oven to 180°C. In a large bowl, combine the eggs with the sugar and beat well until you get a frothy mixture. Add the milk, oil, and rum essence, mixing continuously. The quenched ammonium bicarbonate is added at this point to give the dough extra fluffiness.
Gradually add the flour, mixing until you get a non-sticky dough. Divide the dough into eight equal parts. On the back of a greased tray, roll out the first layer using a rolling pin. Bake the layer in the oven for a few minutes until it turns golden. After baking, carefully remove the layer and place it on a newspaper to cool. Repeat this process for the remaining layers.

2. Preparing the cream:
In a large pot, caramelize the sugar over medium heat, stirring constantly to prevent burning. Once the sugar has melted and turned golden, add the butter and stir until completely melted. Then, pour in 3/4 of the milk. Mix well and let it simmer on low heat.
In another bowl, combine the remaining flour with the rest of the milk and rum essence, then add the mixture to the pot with caramelized sugar. Continue stirring constantly until the cream thickens. Finally, add the ground walnuts and let the cream cool slightly.

3. Assembling the cake:
Fill a cup with cream and keep it cold. Place the first layer on a platter, then spread the hot cream on it. Continue with the next layers, ensuring each is well covered with cream. Finally, place the last layer on top. It is important to put an even weight on the cake to press it down, ensuring the layers do not break. Let the cake cool and set overnight.

4. Cutting and glazing:
The next day, cut the cake into three lengthwise, then each part into triangles, resulting in the characteristic mountain shapes. Use the reserved cream to glue the triangles together.
For the glaze, combine the broken chocolate, liquid cream, cocoa, and sugar in a pot over low heat. Stir until the chocolate is completely melted. Let it cool slightly, then spread the chocolate glaze over each "mountain." Sprinkle ground walnuts or grated coconut on top, depending on your preference.

5. Serving and suggestions:
The Carpathian Cake is served with a warm drink, such as a fragrant tea or mulled wine, which will enhance the sweet flavors of the dessert. It is ideal to be enjoyed with loved ones, bringing a festive atmosphere. You can try the version with white chocolate glaze or add a dash of coffee to the cream for a more intense flavor.

Useful tips:
- Make sure all ingredients are at room temperature to achieve a homogeneous dough.
- Use a spatula to spread the cream evenly, so every bite is just as delicious.
- If you want to add a touch of originality, you can replace the walnuts with ground almonds or hazelnuts.

Frequently asked questions:
- Can I use another type of sugar? Yes, you can use brown sugar for a more intense flavor.
- How can I store the cake? It keeps well in the refrigerator, covered, for a few days. The taste improves as the flavors combine.

Nutritional benefits:
The Carpathian Cake is rich in calories, due to the sugar and fats from the butter, but it also contains walnuts, which provide a good source of protein and healthy fatty acids. Like any dessert, it is a treat, so enjoy it in moderation!

So, embrace tradition and enjoy every step of preparing the Carpathian Cake. Each bite will remind you of the beautiful moments spent with loved ones. Enjoy your meal!
