Tiramisu recipe with sponge cake
Tiramisu with Base – A Delicious Indulgence for the Soul
Tiramisu is an iconic dessert, loved by many generations and associated with special moments. Whether it's a family celebration or a simple evening when you want to treat yourself, this layered cake will bring a smile to your face. The recipe I'm suggesting is a personalized version, without using biscuits, which makes it even more interesting. This recipe was inspired by the beautiful memories of my wedding, where tiramisu was the true star of the evening. Let's start the culinary journey!
Preparation time: 20 minutes
Baking time: 35-40 minutes
Total time: 1 hour (plus cooling time)
Number of servings: 12
Ingredients
For the base:
- 4 large eggs
- 4 tablespoons of sugar
- 3 tablespoons of flour
- 2 packets of vanilla sugar
- 1 essence of rum
For the tiramisu cream:
- 4 egg yolks
- 5 tablespoons of sugar
- 1 box of mascarpone cheese (250 g)
- 400 ml of liquid cream
- essence of rum
- essence of vanilla
For the syrup:
- 1 liter of strong brewed coffee
- 1 essence of rum
- 2 teaspoons of sugar
Step by Step
1. Preparing the base
- Start by separating the egg whites from the yolks. Beat the egg whites with the sugar until you get a firm foam. This step is crucial to ensure a light and airy texture for the base.
- Carefully add the yolks, flour, and spices (vanilla sugar and rum essence) over the egg white foam. Gently mix using a spatula to avoid losing the air in the mixture. Here, it's important to be delicate!
- Pour the mixture into a baking tray lined with parchment paper, ensuring it is evenly distributed.
- Preheat the oven to 180°C and bake the base for 35-40 minutes, or until a toothpick inserted in the middle comes out clean. Once done, let it cool slightly, then peel off the parchment paper and let it cool completely. Cut the base into two equal parts widthwise.
2. Preparing the syrup
- Brew strong coffee and let it cool. Add the rum essence and sugar, mixing well to dissolve. This syrup will add depth and flavor to your dessert.
3. Preparing the cream
- In a bowl, beat the egg yolks with the sugar until they become a light-colored cream. Add the vanilla essence and mascarpone cheese, mixing well until smooth.
- In another bowl, whip the liquid cream until firm. Then, carefully fold the cream into the mascarpone mixture, adding the rum essence as well. This will bring a fragrant note and make the cream smoother.
4. Assembling the cake
- Use a round cake pan, lined with plastic wrap to facilitate the removal of the cake. Place the first half of the cream, then lay the first base. Soak it with half of the brewed coffee.
- Add the remaining cream, then place the second base, which you soak with the rest of the coffee. Cover with plastic wrap and let the cake chill in the fridge for a few hours or, ideally, overnight. This resting time allows the flavors to blend.
5. Decorating and serving
- Once the cake has cooled well, remove it from the fridge. Cover it with whipped cream and dust with cocoa or NES, mixed with a bit of vanilla sugar. You can decorate it to your liking, either with grated chocolate, fresh fruits, or even almond flakes.
- Serve it with freshly brewed coffee or a glass of sweet wine for a perfect culinary experience.
Practical tips
- Make sure all ingredients are at room temperature to achieve a smooth emulsion.
- If you want a lower-calorie version, you can replace the cream with Greek yogurt while maintaining a creamy texture.
- Experiment with adding flavors like instant coffee or cocoa to the base to intensify the dessert's flavor.
