- 1 sachet of vanilla sugar

For the cream:
- 1 fresh pineapple (approximately 500 g)
- 150 g coconut
- 800 ml whipped cream
- 2 eggs
- 300 ml milk
- 50 g cornstarch
- 200 g white chocolate
- 100 g butter

For the syrup:
- 500 ml wine
- 7 cloves
- 1 vanilla bean

For the chocolate coating and chocolate sticks:
- 500 g dark chocolate (minimum 35% cocoa)

Decoration:
- Projection foil
- Fondant (for roses)
- Edible pearls (optional)

Preparation:

Step 1: Preparing the layers
Start by preparing the first layer. In a bain-marie, melt the butter, milk, and dark chocolate. Make sure to stir constantly to achieve a smooth mixture. Once the chocolate and butter have melted, remove the mixture from heat and let it cool slightly. Add the egg yolks, rum, vanilla sugar, and baking powder.

In a separate bowl, whip the egg whites until stiff peaks form. Gently fold them into the chocolate mixture. Finally, add the flour and mix lightly until you obtain a batter similar to sponge cake.

Pour the mixture into a cake pan (28 cm in diameter) and bake in a preheated oven at 180°C for 20-25 minutes. Do not open the oven door in the first 20 minutes to allow the layers to rise evenly.

For the second layer, repeat the same steps, but use the ingredients specified for the second layer. This will create a rich texture and an intense chocolate flavor, perfect for dessert lovers.

Step 2: Preparing the cream
While the layers are baking, prepare the cream. In a bain-marie, melt the butter and white chocolate. Once melted, add the milk mixed with cornstarch and egg yolks. Cook the mixture, stirring constantly, until it reaches a consistency similar to thick cream. Let the cream cool, then fold in the whipped egg whites and coconut.

Step 3: Assembling the cake
Once the layers have completely cooled, cut them in half. Prepare the syrup from wine, cloves, and vanilla bean, which you will use to soak the layers. Place the first half of the layer on a platter, generously soak it, add slices of fresh pineapple, and cover with a layer of cream. Repeat the process with the other layers, alternating between pineapple and cream. Finally, cover the cake with a layer of cream on top and on the sides. Let it chill in the refrigerator for at least 3 hours.

Step 4: Preparing the chocolate sticks
To add a decorative element to the cake, cut the projection foil into small rectangles. Brush each rectangle with melted chocolate and join them at the ends to form sticks. Wait for them to harden completely.

Step 5: Decorating the cake
Decorating the cake is your moment of creativity. Use the chocolate sticks and mold roses from fondant. Don’t forget to add edible pearls for an elegant touch.

Chocolate fantasy can be served alongside a scoop of vanilla ice cream or a cup of aromatic coffee for a delicious contrast.
