Cauliflower is a versatile ingredient that, due to its delicate texture and mild flavor, can be transformed into a delicious and nutritious dish. In this recipe, we will prepare cauliflower and tuna fritters, a perfect combination for a light lunch or dinner. Follow the steps below to achieve golden and appetizing fritters!

Start by boiling the cauliflower. Choose a fresh cauliflower with firm, green florets. Remove the leaves and cut the cauliflower into small florets, then place them in a pot of boiling water with salt. Boil for about 8-10 minutes until they become tender but not too soft. After boiling, drain the cauliflower in a colander and let it drain well, then mash it with a fork until you get a smooth paste. It is important to let the cauliflower drain in a fine sieve so that the excess water is completely removed.

Meanwhile, open the can of tuna and drain the oil well so that the fish is as dry as possible. In a separate bowl, finely chop the fresh parsley, but if you prefer, you can also use fresh dill for a different flavor. Add the boiled and mashed cauliflower to the bowl with the drained tuna, then sprinkle the chopped parsley. Lightly beat the egg or eggs (if they are very small) and add them to the mixture. Season with a little salt and, if the mixture seems too soft, sprinkle a few tablespoons of breadcrumbs and mix again.

Now that you have the mixture ready, it's time to shape the fritters. Using your hands or two spoons, form larger portions of the mixture and roll them in breadcrumbs to achieve a crispy crust. Heat oil in a deep pan, and when it is hot, add the fritters. Fry them on both sides until golden and crispy, about 3-4 minutes on each side. After frying, remove them to absorbent paper to remove excess oil.

The cauliflower and tuna fritters can be served hot or cold, and the combinations are varied. You can pair them with a fresh salad, creamy mashed potatoes, or a flavorful tomato sauce.
