To prepare a delicious recipe for sweet bread with various fillings, we will begin by preparing the necessary ingredients. The first step is to take care of the walnut filling. In a pot, we put 50 grams of sugar to boil together with 120 grams of water. These will boil until the sugar completely dissolves, forming a sweet syrup. Once we have obtained the syrup, we add 200 grams of ground walnuts, mixing well to combine all the ingredients. We continue by gradually adding milk until we obtain a creamy composition that is not too liquid. After we finish mixing, we let the filling cool slightly. At this point, we flavor the composition with cinnamon, grated lemon zest, and a few drops of lemon juice to give it a fresh and refreshing note.

To prepare the poppy seed filling, we repeat the initial process. We boil again 50 grams of sugar in 120 grams of water, letting it dissolve. We add 200 grams of ground poppy seeds, 50 grams of melted butter, a finely grated apple, and a handful of raisins. We mix all the ingredients so that they integrate perfectly, obtaining a rich and flavorful filling.

Now we focus on the sweet bread dough. We use a classic dough recipe that requires flour, yeast, milk, eggs, and a pinch of salt. We mix the dry ingredients and gradually add warm milk and eggs, kneading until the dough becomes elastic and homogeneous. Once the dough is kneaded, we cover it with a clean towel and let it rise for about 30 minutes, until it doubles in volume.

After the dough has risen, we divide it into equal portions, depending on the number of sweet breads we want to make. I prefer to make six sweet breads, as I do not like them very thin. We roll each portion of dough on a floured work surface, adding the walnut or poppy seed filling, as preferred. We roll the dough tightly, forming a tight roll, then place the sweet breads in the baking tray, leaving enough space between them to rise. We brush the edges with a little oil, and on top, we apply a beaten egg to achieve a golden and appetizing crust.

We bake the sweet breads until they become golden and brown on top, their enticing aroma filling the entire house. Once they are ready, we let them cool on a cooling rack, and then we can enjoy them with loved ones, savoring each soft and tasty slice.
