This recipe brings together various textures and flavors, from the intense creaminess of chocolate to the crunchiness of the wafer and the tangy sweetness of the fruits. Perfect for special occasions or simply to indulge yourself, this dessert will bring smiles to the faces of your loved ones. Let's get started!

Preparation time:
- Preparation: 30 minutes
- Cooling: 2 hours (or overnight)
- Total: 2 hours and 30 minutes (or more if left to cool overnight)
- Servings: 8 servings

Ingredients:
- 200 ml liquid cream
- 300 g quality milk chocolate
- 200 g dark chocolate
- 2 tablespoons oil (preferably sunflower or coconut oil)
- 50 ml sweet milk
- 1 medium egg
- 2 tablespoons raw sugar
- 20 ml water
- 1/4 packet gelatin (about 5 g)
- Frozen cherries and sour cherries (or other sour fruits, as preferred)
- 2 chocolate-coated wafer discs
- Decorations as desired (e.g., grated chocolate, nuts, or fresh fruits)
- 1 tablespoon amaretto (optional)

Necessary utensils:
- Stainless steel discs (or silicone molds)
- Plastic wrap
- Bowl for a water bath
- Mixer or whisk
- Silicone spatula
- Small pot for melting chocolate
- Spoon for pouring

Step by step:

Step 1: Preparing the molds
The first thing we need to do is prepare the molds in which we will pour the mixture. Use stainless steel discs and cover them with plastic wrap, ensuring that the edges are well pressed to prevent the mixture from leaking.

Step 2: Melting the chocolate
Start by melting 300 g of milk chocolate. This process can be done in a water bath, meaning in a bowl placed over a pot of boiling water, stirring constantly to avoid burning. The chocolate should be completely smooth and shiny.

Step 3: Preparing the cream
In another bowl, beat the egg yolk with the 2 tablespoons of raw sugar until it becomes a creamy mixture. Transfer the mixture to the water bath and continue to stir until it thickens slightly (do not let it boil!). Add the melted chocolate and mix well.

Step 4: Gelatin
Hydrate the gelatin in 20 ml of cold water for 5 minutes. Once it has swollen, incorporate the gelatin into the chocolate mixture, ensuring it melts completely. Remove the bowl from the water bath and let it cool.

Step 5: Preparing the whipped cream
Whip the liquid cream until it becomes firm whipped cream, then gradually fold it into the chocolate cream, using a spatula to maintain air in the mixture.

Step 6: Assembling the dessert
In each mold, place a chocolate-coated wafer disc, then add a few frozen fruits. Pour some of the chocolate mixture over until the mold is full. Cover with plastic wrap and refrigerate for a minimum of 2 hours (or overnight for optimal results).

Step 7: Preparing the glaze
For the glaze, melt 200 g of dark chocolate together with 50 ml of milk and 2 tablespoons of oil, stirring well until it becomes smooth. Let the glaze cool (it should not be warm) before coating the dessert.

Step 8: Finalizing
Remove the molds from the fridge and carefully unmold each dessert. Coat them in the tempered chocolate glaze and decorate as desired. Return to the fridge until serving.

Useful tips:
- Quality chocolate: Make sure to use good quality chocolate, as this will dramatically influence the final taste of the dessert.
- Tempering the glaze: It is essential to wait until the glaze cools down so as not to melt the chocolate cream.
- Gelatin: Avoid boiling the gelatin, as it will lose its gelling properties. A small amount, as we used, provides a creamy texture, ideal for this dessert.

Variations and combinations:
This dessert can be customized in countless ways. You can replace the sour fruits with other types of fruits or add a splash of rum or vanilla for an extra flavor boost. Also, for a more pleasant contrast, you can serve it alongside vanilla ice cream or mascarpone cream.

Personal stories:
I fondly remember the moments spent in the kitchen with family, preparing elaborate desserts for holidays. This chocolate recipe quickly became everyone's favorite, and each guest was impressed by its layers of textures and flavors. It is a dessert that brings people together.

Nutritional benefits:
It is important to mention that, although it is a delicious dessert, it also contains a significant amount of calories due to the chocolate and cream. However, dark chocolate brings antioxidants and can have beneficial effects on heart health, while the fruits contribute essential vitamins and minerals.

This chocolate dessert with sour fruits is not just a simple recipe, but a culinary experience that will delight your senses and add a touch of magic to any occasion. I invite you to try it and enjoy every bite!
