Candied Ginger
To prepare a delicious and aromatic ginger snack, we start by choosing a fresh, juicy ginger root full of flavor. This is essential for achieving a unique texture and taste. After selecting the root, we wash it carefully under cold water to remove impurities. Using a spoon, we peel the skin, being careful to keep as much of the aromatic flesh as possible. Once the ginger is peeled, we cut it into thin strips, about 2-3 mm thick. These will resemble potato chips, but with a smaller proportion, which will give them a pleasant texture.
While cutting the ginger, we place a cup of sugar and water on high heat. It is important that there is enough water to dissolve the sugar, but not so much that it dilutes the ginger's flavor. When this mixture begins to boil, we add the cut ginger strips, allowing them to simmer uncovered for about 30 minutes. During this time, the ginger will begin to become glossy and will absorb some of the syrup's sweetness, transforming into a delicacy.
After boiling, we turn off the heat and let the ginger cool in its syrup. It is essential to cover the pot with a lid and leave it at room temperature, not in the fridge, to allow the flavors to concentrate. The next day, we add another cup of sugar over the already cooked ginger and simmer again on low heat for 30 minutes. This will intensify the flavor and create a thicker syrup.
Once boiled, we let the ginger cool again in the formed syrup. Once cooled, it is time to strain the ginger to remove the excess syrup. These delicious ginger strips can now be mixed with the last cup of sugar to give them a sweet crust. Then, we place them on a baking sheet, spread out, to dry. The drying process takes about 6 hours, depending on the humidity in the air.
Once dried, the ginger snacks can be stored in an airtight container, in a cool place, but not in the fridge, to maintain their freshness and flavors. This recipe not only provides a delicious snack but also an excellent way to take advantage of the beneficial properties of ginger.
