Welcome to our kitchen! Today we will prepare a snail with sorrel and cheese, a recipe that is not only delicious but also packed with nutrients and health benefits. Sorrel, a green leafy plant rich in minerals, is often underestimated. However, combined with fine cheeses, it transforms this dish into a true delicacy. Additionally, using goat milk whey, a wonder ingredient with multiple benefits, makes this snail not only tasty but also healthy.

Ingredients needed

*For the dough:*
- 300 ml warm goat milk whey
- 1 teaspoon salt
- 1 tablespoon sugar
- 3-4 tablespoons olive oil
- 1 teaspoon flax seeds
- 1 teaspoon sesame seeds
- 500 g flour
- ½ small cube of fresh yeast, crumbled

*For the filling:*
- 1 large bunch of white and red sorrel
- 2-3 green onions
- 2-3 tablespoons olive oil
- Salt and freshly ground pepper, to taste
- 200 g sheep cheese
- 200 g Făgăraș cheese
- 1 egg

*For brushing:*
- 1 egg

*For decoration:*
- Flax seeds

Preparing the dough

1. Activating the yeast: In a small bowl, dissolve the yeast with a tablespoon of warm whey and a little sugar. Let it sit for 5-10 minutes until it becomes frothy. This is a crucial step for achieving a fluffy dough.

2. Mixing the ingredients: In the bread machine bowl, add the warm whey, salt, sugar, olive oil, flax seeds, and sesame seeds, then the flour. Finally, add the activated yeast. Use the kneading program for 15 minutes. If you don’t have a bread machine, you can knead by hand until you get an elastic dough.

3. Letting the dough rise: Cover the bowl with a damp towel and let it rise for 15 minutes in a warm place, away from drafts.

Preparing the filling

1. Preparing the sorrel: Wash the sorrel well and trim the stems. Cut the leaves into thin strips.

2. Sautéing the vegetables: In a skillet, heat the olive oil over medium heat. Add the sliced green onions and sauté for 2-3 minutes until they become soft. Then, add the sorrel and let it cook for 8-10 minutes until it wilts.

3. Finalizing the filling: Once the sorrel has cooled slightly, add the crumbled sheep cheese, Făgăraș cheese, egg, salt, and pepper to taste. Mix well until you have a homogeneous mixture.

Forming the snail

1. Dividing the dough: Place the risen dough on a lightly floured surface and divide it into two equal parts.

2. Rolling out the dough: Take the first piece of dough and roll it out with a rolling pin on a floured surface, forming a thin sheet, longer than wide.

3. Adding the filling: Spread half of the sorrel filling over the dough, evenly distributing it along the length.

4. Forming the roll: Bring the edges of the dough inward and roll it tightly, forming a log. Gently pinch the edges to prevent the filling from leaking out.

5. Shaping the snail: Place the log in a baking dish lined with parchment paper, starting from the center and spiraling to give it a snail shape. Repeat the process with the second piece of dough.

Baking and serving

1. Brushing and rising: Brush the snail with beaten egg and sprinkle flax seeds on top. Let it rise for another 15 minutes.

2. Baking: Preheat the oven to 170 degrees Celsius and bake the snail for 30-35 minutes until golden and crispy.

3. Cooling and serving: Once the snail is ready, let it cool slightly, then cut it into slices and serve warm, alongside green onions, fresh tomatoes, or a green salad.

Helpful tips

- Goat milk whey is an essential ingredient, adding flavor and nutrients. If you can’t find it, you can use cow milk whey, but the taste will be slightly different.
- You can experiment with different cheeses, such as telemea or ricotta, for a customized filling.
- If you want a quicker version, you can use puff pastry instead of homemade dough. This will reduce preparation time and will still be delicious.

Nutritional benefits

This snail with sorrel and cheese is rich in protein due to the cheeses and whey. Sorrel is an excellent source of vitamins A and C, as well as minerals like iron and calcium, benefiting the immune system and bone health.
