Bean puree with roasted peppers

 Ingredients: Necessary for 4 people: 2 cans of white bean (the can was 400 g) 2 pcs. red onion 4 pcs bell peppers (red, yellow, green) (I used the peppers from the freezer) 4 tablespoons of olive oil 3 tablespoons of balsamic vinegar (I used regular vinegar as I couldn't find balsamic) salt and ground white pepper

To prepare this delicious recipe, we start by draining the liquid from the can of beans, keeping about a quarter of the liquid. This step is essential for achieving a smooth and creamy texture. Then, we transfer the beans to the food processor, adding a little of the reserved liquid. We turn on the processor and grind the beans until we achieve a consistency similar to a puree. It is important to ensure that there are no large pieces left, so we mix well, and finally season the puree with salt and white pepper to taste. We continue to flavor the mixture by adding the three tablespoons of vinegar, which will provide a note of freshness and acidity. We mix again to integrate all the ingredients.

The next step is to prepare the bell peppers. They can be roasted either on the hot plate or in the oven until the skin becomes slightly charred and peels off easily. After roasting, we let them cool a bit, then we peel off the skin and seeds. We cut the peppers into strips about 1 cm wide, taking care to preserve their shape and texture. Salt the pepper strips and add a little vinegar to enhance the flavors.

In a pan, we put the four tablespoons of olive oil and sauté the thinly sliced red onion. It is important not to brown it too much, just until it becomes transparent and releases its sweet aroma. This will add an extra layer of flavor to our dish.

Now we are ready to assemble the dish. In a glass or bowl, we put the bean puree as a base. On top, we add 1-2 tablespoons of sautéed onion, along with the oil, and then we arrange the strips of marinated peppers. It is good to be generous with the peppers so that we have a harmonious combination of colors and flavors. This recipe not only looks spectacular, but its taste is an explosion of flavors, perfect to be served as an appetizer or side dish. Enjoy this simple yet elegant dish that will delight any table!
