Brown Rice with Soy Sauce and Mushrooms
Ingredients: -1 cup brown rice -3 cups boiled water -salt -1 cup fresh or frozen green peas -1 cup canned sweet corn -3 tablespoons olive oil -1/4 teaspoon curry (optional) -1/4 teaspoon Indian saffron (optional) For the soy sauce and mushrooms I used: -100 g soy cubes, boiled in water with homemade vegetable broth -500 g fresh mushrooms -one medium onion, finely chopped -2 small carrots -one hot pepper -2 cubes of bell pepper paste (bell pepper blended and frozen in an ice cube tray) or 1 bell pepper, whatever we have on hand -3 tablespoons olive oil -fresh parsley -salt, powdered thyme -garlic -added in the last 5 minutes of cooking
Brown rice is undoubtedly an excellent choice for a healthy diet, due to its superior nutritional values compared to white rice. Although its texture may be different and not as fluffy as that of white rice, its rich flavor and distinct aroma successfully compensate for these differences. Additionally, brown rice contains essential fibers, vitamins, and minerals, making it a reliable ally in maintaining a balanced diet.
To prepare brown rice with milk, a ratio of 1:3 between rice and water should be followed. The boiling time usually varies between 35 and 45 minutes, depending on personal preferences regarding consistency. The rice should be washed well under cold water to remove impurities and excess starch. In a pot, heat oil, preferably olive or coconut oil, in which the rice grains are lightly sautéed for a few minutes until they become slightly translucent.
Then, add boiling water, season with salt or other preferred spices, and after 10 minutes, peas and corn can be added. These vegetables will provide a special flavor and pleasant texture to the dish. Cover with a lid and let it simmer on low heat for about 30 minutes. It is important to check the rice's consistency from time to time to adjust it to personal taste.
On the other hand, black rice is prepared in a simple yet effective way. For about 2 servings, you need 1 cup of black rice and 2 cups of water. It is boiled for 45 minutes until it becomes soft but not overcooked. It is a fantastic ingredient, having not only an attractive appearance but also a delicious taste, easy to add to various dishes.
The soy sauce with mushrooms adds an extra layer of flavor and complexity to the dish. Start by finely chopping the onion, and slice the carrots into rounds. The quartered mushrooms are added to the mixture. The rest of the ingredients, including the soy sauce, are added to a baking dish, which is covered with foil or a lid. Everything is placed in the oven at a moderate temperature, allowing the dish to bake for an hour. Garlic and fresh parsley are added towards the end to retain their intense aroma. This dish thus becomes an excellent choice for a healthy and flavorful meal, blending tradition with innovation in the kitchen.
