Osso Bucco Milanese: A Savory Delight for Special Moments

Osso bucco is a classic beef dish, appreciated for its rich flavor and tender texture. This dish has gained popularity worldwide, with deep roots in culinary tradition. Although the ingredients may seem simple, the magic lies in how they are combined and cooked, resulting in a dish with sophisticated flavors. This Milanese osso bucco recipe is sure to become a favorite in your kitchen.

Preparation time: 30 minutes
Cooking time: 2 hours
Total time: 2 hours and 30 minutes
Servings: 4

Ingredients:
- 4 pieces of beef shank (approximately 1 kg)
- 2-3 tablespoons of olive oil
- 1 piece of butter (approximately 30g)
- 2 medium onions
- 2 carrots
- 1 parsnip
- 1 red bell pepper
- 3 tomatoes (or a can of diced tomatoes)
- 1-2 tablespoons of tomato paste
- 2 cloves of garlic
- 2-3 bay leaves
- 1 glass of semi-dry white wine
- 500 ml of beef broth
- Salt and pepper, to taste
- Fresh parsley for garnish

Step-by-step preparation:

1. Prepare the meat: Start by washing the beef shank pieces well. Dry them with a paper towel. Season with salt and pepper, then dredge each piece in flour, ensuring it is evenly coated. Shake off the excess flour.

2. Brown the meat: In a cast-iron pot or deep skillet, melt the butter with the olive oil over medium heat. Once the fat is heated, add the pieces of meat and brown them for 2-3 minutes on each side until they turn golden. This step is essential to seal in the juices of the meat.

3. Prepare the vegetables: Meanwhile, peel and prepare the vegetables. Chop the onions finely, slice the carrots and parsnip into rounds, and dice the bell pepper into larger cubes. Once the meat is browned, remove it and place it on a plate.

4. Sauté the vegetables: In the same pot, add the onion and sauté until translucent. Then, add the carrots and parsnip, continuing to sauté for a few minutes. Finally, add the bell pepper and thinly sliced garlic. The flavors will combine beautifully.

5. Add the wine and spices: After the vegetables are well sautéed, pour the white wine into the pot. Let it simmer over medium heat for 5-7 minutes, allowing the alcohol to evaporate and the flavors to concentrate. Add the bay leaves and peppercorns.

6. Reintroduce the meat: Place the pieces of meat back into the pot, along with the beef broth. Season with salt and pepper to taste. Cover the pot with a lid and reduce the heat to low. Let it simmer for 1.5 - 2 hours, stirring occasionally. The meat should become extremely tender, and the sauce should be rich and flavorful.

7. Add the tomatoes and tomato paste: Halfway through the cooking time, add the peeled and diced tomatoes, as well as the tomato paste. These will add extra flavor and color to the sauce.

8. Finalize the dish: Once the cooking time is up, check the texture of the meat. It should be so tender that it easily pulls away from the bone. Sprinkle fresh chopped parsley on top before serving.

9. Serving: Traditionally, osso bucco is served with risotto alla milanese, but we also recommend a side of mashed potatoes, which perfectly complements this dish. Don’t forget to sprinkle gremolata (a mix of parsley, lemon, and garlic) on top for an extra burst of flavor.

Helpful tips:
- Make sure to choose quality meat, preferably from a trusted butcher, for the best results.
- If you want to enhance the flavor, you can also add a diced carrot and celery.
- For an even deeper taste, you can let the meat marinate in wine and spices a day before cooking.

Nutritional benefits:
Osso bucco is an excellent source of protein, iron, and zinc, thanks to the beef. The addition of vegetables contributes fiber and essential vitamins, making this dish a healthy choice for a family meal.

Frequently asked questions:
- Can I use pork instead of beef? Yes, but the taste will be different.
- Is it possible to prepare this dish in advance? Absolutely! Osso bucco is even tastier the next day, after the flavors have had time to develop.

To turn your meal into a true feast, pair the dish with a semi-dry white wine or a blonde beer, which will balance the flavors of the meat. Enjoy your meal!
