Ingredients:
- 4 large potatoes

Preparing the Vegetables:
The first step in making this stew is to prepare the vegetables. Peel the potatoes and cut them into small cubes, about 2-3 cm. This size will ensure even cooking. Slice the onion into thin rings, and cut the bell peppers into thin strips. Blanch the tomatoes in hot water for a few seconds, then peel them, making them a bit softer and easier to integrate into the stew.
Cooking:
In a large pot, add the 3 tablespoons of oil and heat it over medium heat. Once the oil is hot, add the sliced onion. Sauté the onion for 4-5 minutes until it becomes translucent and releases its aroma. Then, add the bell pepper and continue to sauté the vegetables for another 3-4 minutes.

Once the stew is ready, remove the lid and let it simmer for a few minutes to evaporate any excess liquid if necessary. Before serving, sprinkle freshly chopped parsley on top, adding a splash of color and freshness.
