Ingredients:
- 5 eggs
- 10 tablespoons of sugar
- 17 tablespoons of flour
- 1/2 packet of baking powder
- A pinch of salt
- 1 packet of vanilla sugar
- 2 teaspoons of rum essence
- For the cocoa cream:
- 60 g of butter
- 1 tablespoon of milk
- 1 tablespoon of sugar
- 2 heaping tablespoons of cocoa (I recommend using high-quality cocoa for a more intense flavor)
- For glazing (optional):
- 2 tablespoons of liquid cream
- 100 g of dark chocolate
Preparation method:
1. Prepare the ingredients:
Make sure all the ingredients are at room temperature. The eggs, sugar, and butter will combine better and homogenize more easily.
2. Beat the egg whites:
In a large bowl, beat the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue mixing until you achieve a firm meringue.
3. Add the yolks:
Incorporate the yolks one at a time into the egg white meringue, gently folding with a spatula to avoid losing air from the mixture.
4. Add the dry ingredients:
Sift the flour together with the baking powder and vanilla sugar. Gradually add them to the mixture, gently mixing until well combined.
5. Prepare the cocoa cream:
In a small saucepan, combine the butter, milk, sugar, and cocoa. Place over medium heat and stir constantly until thickened, being careful not to let it boil. Once cooled, incorporate the cream into half of the cake batter.
6. Line the pan:
Preheat the oven to 180°C. Grease a loaf pan with butter and a little flour to prevent sticking.
7. Assemble the cake:
In the prepared pan, alternate adding spoonfuls of the white batter and the cocoa batter to create a marbled effect.
8. Bake the cake:
Place the pan in the oven and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
9. Prepare the glaze:
While the cake cools, you can prepare the glaze. In a small saucepan, melt the chocolate together with the cream over low heat, stirring constantly. Once melted, let the glaze cool slightly.
10. Finish the dessert:
Once the cake has completely cooled, pour the chocolate glaze over the top. Wait for it to set at room temperature or, for a quicker result, place it in the refrigerator.
11. Serving:
Cut the cake after the glaze has set. I recommend serving it with a dollop of fresh whipped cream on top for a contrast of textures and flavors.
Customized version:
You can experiment with different flavors by adding, for example, a teaspoon of orange essence to the white batter or replacing the cocoa with melted chocolate for an even more decadent version.
