Fruit Cake
I made this cake for my husband's birthday, in a heart shape, aiming for something simple, colorful, with fruits. Generally, I prepare the base a day in advance to have time to cool it properly and cut it without crumbling. For decoration, I used whipped cream and fruits from a compote, as I had on hand. The cake turned out quite easily, with regular ingredients, nothing complicated.

Preparation Method
1. Preparing the base
1.1. I start with the base, which I usually make a day in advance. I beat the eggs with the sugar using a mixer for a few minutes until I get a light-colored, frothy cream. I add the water and mix a little more.
1.2. I incorporate the sifted flour, along with the baking powder and salt, mixing gently, without overdoing it, so the mixture doesn’t deflate. The final mixture is not liquid, but flows easily.
1.3. I grease the pan with butter and dust it with flour. I used a 26 cm heart-shaped pan, but a round one of the same size works too.
1.4. I pour the entire mixture into the pan and place it in the preheated oven at 180°C. It took about 35-40 minutes for me. The base is ready when it turns golden on top and passes the toothpick test. I take it out of the oven, let it cool in the pan for 10 minutes, then remove it and let it cool at room temperature until the next day.
2. Preparing the cream
2.1. In a bowl, I put the milk, eggs, and sugar. I mix well with a whisk or mixer to make everything homogeneous.
2.2. I pour the mixture into a thick-bottomed or non-stick pot. I add the grated lemon peel and mix again.
2.3. I place it on low heat. I gradually add the flour, mixing continuously with a whisk to avoid lumps. I don’t stop mixing, otherwise, it sticks easily.
2.4. After about 8-10 minutes, the cream thickens. I take it off the heat and let it cool to room temperature. I don’t use butter or other fats.
3. Assembling the cake
3.1. When the base is completely cool, I cut it into three equal horizontal slices. It cuts easier with a long, thin-bladed knife.
3.2. I soak each layer using the syrup from the fruit jar. I don’t overdo it, so it doesn’t become too soft, but I don’t leave it dry either.
3.3. On the first layer, I place a quarter of the cream and sprinkle pieces of drained fruit from the compote. I repeat for each level, then place the last layer on top.
3.4. With the remaining cream, I cover the cake thinly, so the whipped cream sticks better.
3.5. I whip the cold liquid cream until it becomes firm, then I decorate the cake as inspired. At the end, I add a few fruits on top.
