Pickled Plums
Ingredients: -3 kg damson plums (Bistrita) Solution, in 1 l water: -500 ml food vinegar, 9 degrees -250 g sugar or honey -1 teaspoon cinnamon, pieces -2-3 whole cloves -10 g salt
Wash the plums well, ensuring that you remove all impurities, then let them drain in a sieve. Once they are well dried, place the plums in the jars you have washed and sterilized earlier. It is important that the jars are completely clean to prevent bacterial growth. Once the plums are evenly placed in the jars, start preparing the preservation solution.
For the solution, put fresh water and quality vinegar in a pot, then add the remaining necessary ingredients: sugar, salt, and desired spices such as vanilla or cinnamon, which can add a special flavor. Let the mixture boil, stirring constantly to ensure the complete dissolution of the sugar and salt. Once the sugar has melted, let it boil for a few more minutes, so the flavors combine perfectly.
After the solution has boiled, pour it hot over the plums in the jars, ensuring they are completely covered by the liquid. It is essential that the plums are well soaked to ensure optimal preservation. After filling the jars, seal them with a lid or plastic wrap, then place them in a warm spot, surrounded by blankets, to allow the steam to act. This process will help them cool slowly, contributing to preserving the flavors.
To determine the exact amount of solution needed, pour water over the plums in the jars, drain it, and measure it. This step is crucial to avoid wasting ingredients. Calculate the proportion of water and vinegar you need to use based on the amount of liquid obtained. Another effective method is to pit the plums; this way, you can check the quality of the fruits and avoid any unpleasant surprises.
If you want to add an ingredient that helps with preservation, you can add one crushed aspirin for each kilogram of plums. Dissolve the aspirin in the prepared solution before pouring it into the jars. This will reduce the amount of vinegar needed to about 100 ml for each kilogram of plums, while also providing a pleasant flavor and ensuring better preservation. Thus, you will be able to enjoy healthy plum delights throughout the year!
