Ingredients:
- 2 pieces of beef shank (approximately 1 kg)
- 200 g veal
- 3-4 roasted peppers (fresh or from a jar, depending on preference)
- 1 large onion
- 1 carrot
- 1 parsnip
- 1/4 celery
- 2-3 potatoes
- 1 bunch of fresh parsley
- 500 ml bors (or more to taste)
- 3-4 tomatoes in their juice (or fresh, depending on the season)
- Salt, to taste
Preparation method:
1. Start by cleaning and washing the beef. Place the shank and veal in a large pot, fill it with cold water, and add a little salt. Bring to a boil, then reduce the heat and let it simmer for about 1-1.5 hours, or until the meat starts to come off the bones. It is important for the soup to simmer slowly to obtain a rich and flavorful broth.
2. Meanwhile, prepare the vegetables. Peel the onion, carrot, parsnip, celery, and potatoes. Cut the vegetables into small cubes, and slice the onion thinly. If using fresh roasted peppers, peel the skin and cut them into strips. If using jarred roasted peppers, drain them well and set them aside for the right moment.
3. When the meat is cooked, remove it from the pot and let it cool slightly. At the same time, strain the broth to eliminate any impurities. Put the broth back in the pot and add the onion, carrot, parsnip, celery, and potatoes. Let the vegetables simmer for 15-20 minutes until they become tender.
4. Meanwhile, debone the meat and cut it into small cubes. Add the meat back to the pot along with the roasted peppers, tomatoes in their juice, and bors. Mix everything well and let the soup simmer for another 15-20 minutes. If you prefer a more sour soup, you can add more bors.
5. Finally, add salt to taste and sprinkle chopped fresh parsley on top. Serve the soup hot, alongside fresh bread or croutons.
Serving suggestion: for an extra touch of flavor, you can add a spoonful of sour cream on top of each bowl of soup. This addition will bring a pleasant creaminess and balance the sour taste of the bors.
