Total preparation time: 40 minutes

Welcome to the world of culinary delights! Today, I invite you to discover our special recipe for a traditional sausage platter, a dish rich in flavors and textures that combines tradition with a touch of creativity. This platter is perfect for a gathering with friends or a festive meal, where each ingredient brings a unique story and flavor.

A brief history

Sausages have long been an ingenious method of preserving meat and have become a symbol of traditional gastronomy. This sausage platter recipe draws inspiration from sausage preparation traditions, where each region contributes with unique recipes. Whether fried or grilled, sausages are always a tasty and satisfying choice.

Ingredients

- 2 chicken alheira sausages
- 1 morcella (blood sausage)
- 1 thick morcella with rice and blood
- 1 black pork sausage
- 200 g corn bread (broa)
- 3 garlic cloves
- 3-4 tablespoons olive oil

Necessary utensils

- Non-stick frying pan
- Ceramic dish or grill
- Kitchen knife
- Serving platter
- Grater (optional, for garlic)

Step by step

1. Preparing the sausages: Start by preparing the sausages. Cut the black pork sausage lengthwise, slightly scoring it to allow the oil to penetrate. This will add an intense flavor to the dish.

2. Frying the sausages:
- Morcella and black pork sausage: In a ceramic dish, add the scored sausages and pour in a little alcohol (you can use red wine or beer). Cover the dish and cook on low heat, frying the sausages for 15-20 minutes, turning them occasionally. You will notice how the aroma intensifies and the sausages become juicy. If you choose to grill, place the sausages on the hot grill and let them cook evenly, turning them frequently to achieve a crispy crust.
- Alheira: In a non-stick frying pan, add the alheira sausages. Fry them over medium heat, being careful not to burst, for about 8-10 minutes.

3. Preparing the morcella with rice: Cut the morcella with rice into thick slices of about 1 cm. In a frying pan, melt a few tablespoons of olive oil and add the crushed garlic cloves, without peeling them. Sauté briefly, then add the morcella slices and fry until crispy on the outside, about 5 minutes.

4. Preparing the corn bread: Cut the corn bread (broa) into slices or cubes, as preferred. You can quickly toast the slices on the grill or serve them fresh for a contrast of textures.

5. Assembling the platter: On a large platter, arrange the slices of corn bread, then add the fried sausages. Position the morcella with rice on the bread, along with the slices of alheira and black pork sausage. You can garnish with fresh herbs, such as parsley or thyme, for an extra touch of color and flavor.

6. Serving: Serve the platter at room temperature, accompanied by a glass of red wine or beer. This combination will enhance the flavors and create a memorable culinary experience.

Practical tips

- Choose quality sausages: The taste of the platter heavily depends on the quality of the ingredients. Buy sausages from trusted butchers or local markets.
- Heat the pan or grill well: A temperature that is too low will cause the sausages to boil instead of fry. Make sure the pan is well heated before adding the sausages.
- Varieties of sausages: You can experiment with other traditional sausages from your area, such as beef or lamb sausages, to bring diversity to the platter.
- Side dishes: You can add grilled vegetables or a fresh salad to balance out the meat-heavy meals.

Frequently asked questions

1. Can I use pre-cooked sausages? Yes, it is a convenient option, but frying them adds a crispy texture and intense flavor.

2. Can leftover sausages be stored? You can keep fried sausages in the refrigerator for 2-3 days. You can reheat them in a pan or oven.

3. What are the approximate calories for a serving? A serving of sausage platter has approximately 600-800 calories, depending on the types of sausages used and the amount of oil.

4. What drinks pair well with this platter? I recommend a dry red wine or a craft beer, which will perfectly complement the intense flavors of the sausages.
