Carob Cake
The cake is a classic dessert, very beloved, that brings joy to every home. Easy to prepare and versatile, it can be customized with various ingredients, adapting to everyone's tastes. In this recipe, I propose a cake with an unusual appearance and a delicious aroma, perfect for impressing guests over the weekend.
To start, prepare all the necessary ingredients: 6 eggs, 300 g of sugar, 200 ml of oil, 250 ml of milk, 400 g of flour, 1 packet of baking powder, 2 tablespoons of cocoa, 2 tablespoons of sifted carob, a pinch of salt, and your preferred essence, either vanilla or rum. Make sure all the ingredients are at room temperature to achieve a well-homogenized dough.
In a large bowl, use a mixer to beat the eggs with the sugar until the mixture becomes a fluffy and light-colored cream. This step is essential, as the air incorporated at this stage will make the cake fluffier. Gradually add the oil, continuing to mix, then add the milk and desired essences, ensuring everything is well integrated.
Once you have a homogeneous mixture, start adding the flour, sifting it in, mixing with a spatula or with the mixer at low speed to prevent lumps from forming. The dough should be slightly thicker than sour cream, but not so thick that it is hard to pour. Finally, add the baking soda extinguished with lemon juice, which will help the cake rise during baking.
Divide the dough into two equal parts. In one of them, incorporate the sifted cocoa, mixing well to achieve an even chocolate shade. In the prepared pan, which can be greased with oil and dusted with flour or lined with baking paper, start pouring the dough alternately: a spoonful of the natural dough, then a spoonful of the cocoa one, continuing until you have used all the ingredients.
Preheat the oven to 180 degrees Celsius and bake the cake for 40-50 minutes, checking with a toothpick if it is done. When the toothpick comes out clean, the cake is perfectly baked. Let it cool in the pan for a few minutes, then transfer it to a rack to cool completely.
Serve the cake plain or dusted with sugar, but make sure it is well cooled before slicing. This delicious cake will surely be a hit at any gathering, and its aroma will fill the whole house with joy.
