To prepare a delicious and fragrant dessert, we start by gathering the necessary ingredients. In a large bowl, we add 300 grams of wheat flour, 150 grams of sugar, and 100 grams of ground almonds. These will provide a crunchy texture and a refined taste to our preparation. After this, we turn our attention to the spices that will give a special note to the cake. We add a teaspoon of ground cinnamon, the grated zest of a lemon, a teaspoon of baking powder, and a packet of vanilla sugar. We mix all the dry ingredients well to ensure that the flavors combine harmoniously.

Next, we will incorporate the wet ingredients. We cut 150 grams of room temperature butter into small cubes and add them to the mixture. Then, we crack two fresh eggs and beat them in a separate bowl, after which we gradually add them to the dough, continuously mixing to obtain a homogeneous composition. When everything is well combined, we cover the bowl with plastic wrap and let it chill in the refrigerator for an hour. This step is essential as it allows the dough to firm up and become easier to handle.

After an hour, we preheat the oven to 180 degrees Celsius. Meanwhile, we prepare a 28 cm round baking tray, lining it with baking paper. We take the dough out of the refrigerator and divide it into two parts, keeping a small portion for decoration. We roll out the dough into a sheet about 3 mm thick, ensuring it is even. We place the sheet of dough in the tray, making sure to cover the edges as well. Using a fork, we prick the dough to prevent air bubbles from forming during baking.

Now it’s time to add a generous layer of fruit jam, preferably plum or apricot, over the entire surface of the dough. On top of the jam, we decorate with strips of the reserved dough, creating an attractive pattern. We place the tray in the preheated oven and bake for about 30 minutes or until the cake turns golden on top. When ready, we let it cool slightly before removing it from the tray. This cake is perfect to be served alongside a cup of tea or coffee, bringing a touch of joy in every bite!
