Horseradish is a perennial plant with an intense and aromatic taste, highly appreciated in Romanian cuisine. Preparing horseradish for preservation is a tradition that not only adds a spicy note to dishes but also provides health benefits. Start by choosing fresh horseradish with firm and healthy roots, avoiding those with spots or damage.

Wash the horseradish roots well under a stream of cold water to remove any impurities or dirt. Once cleaned, remove the outer skin using a sharp knife. This can be quite a challenging step, as horseradish has a very strong smell, and the essential oils will cause irritation in the eyes. It is recommended to wear gloves and, if possible, a mask to avoid discomfort.

After the horseradish is cleaned, chop it into smaller pieces to facilitate the grinding process. Use a food processor to grind it finely or, if you prefer a coarser texture, you can opt for a grater. Grinding horseradish releases its aromatic and spicy compounds, so make sure you work in a well-ventilated environment.

Once the horseradish is ground, transfer it to a large bowl. In another pot, prepare a mixture of water, sugar, vinegar, and salt. The quantities may vary depending on your preferences, but a basic recipe might include 1 part water, 1 part vinegar, and 1-2 tablespoons of sugar and salt for every 200 g of horseradish. Boil this mixture for a few minutes, stirring constantly until the sugar and salt are completely dissolved.

After the mixture is ready, let it cool slightly before pouring it over the ground horseradish. Make sure the horseradish is completely covered by the liquid. Transfer everything into clean, sterilized jars, and seal them tightly. Place the jars in a cool, dark place where the horseradish will marinate. After a few days, the horseradish will be ready to consume, having an intense and aromatic taste, perfect for accompanying various dishes, from roasts to salads. This preserved horseradish will add a note of flavor and a health boost to your meals, being an excellent choice for every season.
