Preparation time: 20 minutes
Cooking time: 30 minutes
Total time: 50 minutes
Number of servings: 4
Necessary ingredients:
*For the bread dough*:
- 300 g flour
- 3 tablespoons cornmeal
- 5 g dry yeast
- 1 teaspoon salt
- Warm water (approximately 200 ml, adjust as needed)
*For the filling*:
- 30 ml olive oil
- 800 g chicken breast, cut into pieces of 1.5-2 cm
- 200 g canned peas (about one can)
- 4 green onions (including the white part)
- 1 medium zucchini, diced
- 60 ml vegetable broth
- Zest of one lemon
- Salt and pepper, to taste
*For the sauce*:
- 60 ml white wine
- 3 cloves of garlic, sliced
- 250 ml heavy cream
- A pinch of nutmeg
- A handful of fresh or dried thyme
Preparation:
1. Preparing the chicken breast: Cut the chicken breast into pieces of 1.5-2 cm and gently pound them with a meat hammer to tenderize. Season with salt and pepper. Heat a grill or skillet over medium heat and cook the chicken breast for 2 minutes on each side until lightly browned. Set aside, keeping warm.
2. Preparing the vegetables: Rinse the peas under cold running water and let drain. In a Pyroflam dish or pot, heat the oil. Add the chopped onion and zucchini and sauté for 2 minutes, stirring constantly.
3. Adding the chicken: Add the chicken breast to the pot with the onion and zucchini, then pour in the vegetable broth. Cover with a lid and let cook over medium heat for 5 minutes.
4. Completing the filling: After 5 minutes, add the peas, lemon zest, salt, and pepper. Let everything simmer for another 3 minutes, gently stirring to combine the flavors.
5. Preparing the sauce: In a separate skillet, heat two tablespoons of oil and add the sliced garlic. Sauté until golden, then deglaze with the white wine. Let simmer over low heat for 3 minutes until the liquid reduces by half. Add the cream, nutmeg, thyme, salt, and pepper, mixing well. Let it boil twice, then pour the sauce over the meat and vegetable mixture.
6. Preparing the dough: In a large bowl, combine the flour, cornmeal, yeast, and salt. Gradually add warm water, kneading until you obtain an elastic and non-sticky dough.
7. Forming the bread lid: On a floured surface, roll out the dough into a round sheet, larger in diameter than the Pyroflam dish. From a mixture of one tablespoon of flour and two tablespoons of water, make a paste to grease the outer edge of the dish.
8. Assembling the dish: Carefully place the sheet of dough over the dish, gently sealing the edges to securely enclose the filling.
9. Baking: Place the dish in a preheated oven at 200°C (392°F) and bake until the dough is golden and crispy, about 20 minutes. Be careful not to crack the dough; even stretching is key!
10. Serving: Once you remove the dish from the oven, let it cool for a few minutes. Carefully break the bread crust and enjoy the enticing aromas that will fill the air. You can serve this dish with a fresh salad or a glass of white wine to complete the culinary experience.
Tips and tricks:
- If you want to experiment with flavors, feel free to substitute the chicken breast with pork or turkey, or add seasonal vegetables such as carrots or bell peppers.
- For an even richer taste, let the sauce simmer a bit longer to concentrate the flavors.
- If you prefer a thinner crust, roll the dough out thinner, but be careful not to make it too thin, or it won't hold the filling.
