Vanilla cream cake
To make a delicious dessert, we start by preparing the base. In a large bowl, we beat the egg whites until foamy, gradually adding sugar. This step is crucial as it will give us a light and airy texture. We continue to beat until the mixture becomes firm and glossy, and the sugar is completely dissolved. Once we have a firm foam, we gradually add cold water, mixing continuously.
In another bowl, we combine flour, cocoa powder, and baking powder, mixing them well. Then, using a spatula or wooden spoon, we fold the dry ingredient mixture into the egg white foam, being careful to mix gently from top to bottom to keep the air in the composition.
We prepare a baking tray lined with parchment paper, ensuring it is well secured. We pour the obtained batter into the tray, leveling it evenly with a spatula. We place the tray in the preheated oven at a moderate temperature and bake the base for 20-25 minutes or until it feels firm to the touch and passes the toothpick test. Once baked, we let the base cool completely.
While the base cools, we prepare the cream. We make the pudding according to the instructions on the package, ensuring we let it cool completely. Meanwhile, in a separate bowl, we cream the butter at room temperature until it becomes fluffy and creamy. Once the pudding is cold, we gradually add it to the whipped butter and mix well, adding lemon zest and juice for extra flavor. We homogenize everything until we obtain a smooth and delicious cream.
After the base has cooled, we soak it with a syrup made from water, sugar, and essences; I opted for 100 ml of freshly brewed coffee, which adds an intense flavor. We let the base absorb the syrup for 5-10 minutes so that it becomes moist and tasty. Then, we spread the cream evenly over the soaked base and, if desired, we can garnish with grated chocolate, fresh fruits, or chopped nuts.
To truly enjoy this dessert, it is recommended to let it chill for at least an hour, if you can resist the temptation! This cake will be a true treat for the taste buds, and the combination of textures and flavors will surely win the hearts of those who taste it. Enjoy your meal!
