Apple and Biscuit Cake
Apple and biscuit cake is a simple and delicious dessert, perfect for moments when you want to impress without putting in an enormous effort. This recipe is easy and quick to prepare, requiring only a few basic ingredients, and the final result is a perfect combination of textures and flavors.
Preparation time: 20 minutes
Baking time: 30-35 minutes
Total: 55-60 minutes
Servings: 12 servings
Ingredients:
- 1.5 kg apples (preferably tart apples like Granny Smith)
- 50 g butter or margarine
- 200 g sugar (you can adjust according to your preferences)
- 1 package of biscuits (about 400 g; digestive or petit beurre biscuits work best)
- 4 eggs
- 250 ml milk
- 1 packet of baking powder (10 g)
- 1 teaspoon of cinnamon (optional, for a more aromatic flavor)
Instructions:
1. Preparing the apples: Start by peeling and grating the apples. The grated apples will add moisture and a pleasant texture to the cake. If you prefer a more intense flavor, you can add a teaspoon of lemon juice to prevent oxidation.
2. Melting the butter: In a large skillet, melt the butter over medium heat. Once the butter is completely melted, add the grated apples and sugar. Mix well so that the sugar dissolves and the apples absorb the flavor of the butter. Cook the mixture for about 5-7 minutes until the apples become slightly soft.
3. Preparing the mixture: In a large bowl, beat the eggs with the milk and baking powder. Add the crushed biscuits (you can use a blender or a rolling pin to turn them into crumbs), mixing well to obtain a homogeneous mixture. If you wish, now is the time to add the cinnamon, which will provide a special flavor.
4. Assembling the cake: Preheat the oven to 180°C. In a large baking tray (about 30x40 cm), add an even layer of the biscuit mixture, then pour the apple mixture on top. Make another layer with the remaining biscuit mixture, completely covering the apples.
5. Baking: Place the tray in the preheated oven and let the cake bake for 30-35 minutes, or until it becomes golden and firm to the touch. You can check if it’s done by inserting a toothpick; if it comes out clean, the cake is baked.
6. Cooling and serving: Let the cake cool in the tray for 10-15 minutes, then cut it into squares. It is delicious both warm and cold. You can serve it with a spoonful of sour cream or vanilla ice cream for a savory contrast.
Useful tips:
- You can experiment with different types of apples, depending on your preferences. Tart apples provide a nice contrast to the sweetness of the biscuits.
- Add chopped nuts or almonds to the mixture for extra crunch.
- If you prefer a more intense caramel flavor, you can add a few tablespoons of brown sugar to the apple mixture.
This quick and simple dessert, apple and biscuit cake, will surely become a favorite in your home. Enjoy every serving and delight in the reactions of your loved ones to this delicacy!
