Preparation time: 20 minutes
Rising time: 2 hours
Baking time: 35-40 minutes
Total time: 2 hours and 55 minutes
Number of servings: 10-12
Ingredients:
- 400 g high-quality flour
- 2 fresh eggs
- Flavors (rum essence and grated orange peel)
- 110 ml warm milk
- 25 g fresh yeast
- 3 tablespoons sugar for milk
- 130 g butter, at room temperature
- A pinch of salt
- 6 tablespoons sugar for filling
- 10-12 tablespoons sugar for caramel
- Varied filling: ground walnuts, raisins, Turkish delight (to taste)
Preparing the dough:
1. Start by adding all the ingredients to the bread machine. Add the warm milk in which you have dissolved the sugar, the eggs, the flavors, the salt, the flour, and the yeast. Make sure to follow the correct order of the ingredients, as this will influence the final texture of the dough.
2. Set the kneading program on the bread machine and let the dough knead until it becomes elastic and homogeneous. You will know it’s ready when it easily pulls away from the sides of the container.
3. After the dough has been kneaded, remove it from the machine and let it rise in a warm place, covered with a clean towel, for about 1 hour, or until it doubles in volume.
Caramelizing the sugar:
4. In the meantime, take a tall pot with a diameter of 28 cm and add 10-12 tablespoons of sugar. Place the pot over medium heat and let the sugar melt, stirring gently to prevent burning. When the sugar turns golden and liquid, quickly pour it over the sides of the pot, covering the surface evenly. This will be the sweet and sticky base of your cake.
Preparing the filling:
5. In a bowl, mix the ground walnuts with 6 tablespoons of sugar, add raisins, and if desired, pieces of Turkish delight. You can use various types of nuts or even chocolate, depending on your preferences. The orange peel adds a fresh and aromatic note.
Forming the cake:
6. After the dough has risen, transfer it to a floured surface. Roll it out into a rectangular sheet about 1 cm thick. Spread the soft butter mixed with the remaining 6 tablespoons of sugar over the dough.
7. Generously sprinkle the filling with walnuts, raisins, and Turkish delight over the entire surface of the dough. Carefully roll the dough, forming a tight roll. Here you can also add other preferred ingredients, such as chocolate or candied fruits.
8. Cut the roll into 6 equal pieces, which you will place upright in the pot with caramel, making sure to leave space between them to allow for rising. This detail is crucial for achieving a fluffy and airy cake.
9. Let them rise again in a warm place, covered, for about 1 hour.
Baking:
10. Preheat the oven to 180°C. After the cakes have risen, place the pot in the oven and bake for 35-40 minutes, until they turn golden and well-baked. You will smell the delicious aroma of freshly baked cake throughout the house.
11. As soon as they are done, remove them from the oven and invert them onto a platter. Here’s an important tip: do not delay in inverting them, as the caramel sugar will harden quickly, making the inversion process impossible.
Serving and suggestions:
The Rosenkrantz cake is best served warm, alongside a cup of warm milk or aromatic tea. You can also add a spoonful of fruit jam for a sweet-sour contrast. This dessert pairs wonderfully with a fragrant coffee or a sweet wine, making every meal a celebration.
Nutritional benefits:
The cake is a source of carbohydrates, and the nuts add proteins and essential fatty acids. The raisins provide fiber and antioxidants, aiding digestion. Of course, consumed in moderation, the cake can be a treat that complements a balanced diet.
Possible variations:
You can experiment with different fillings using ground almonds, chocolate, or dried fruits. You can also add spices like cinnamon or cardamom to customize the flavor of your cake.
