If you're looking for a simple yet spectacular recipe, coconut cake is the perfect choice. This delicacy with a light texture, fragrant aroma, and rich glaze will surely impress anyone who tastes it. Let's see how you can prepare it step by step!

Necessary ingredients:

For the base:
7 egg whites
7 tablespoons of sugar
3 tablespoons of flour
100 g coconut

For the cream:
7 egg yolks
150 g sugar
5 packets of vanilla sugar
4 tablespoons of flour
250 ml milk
1 package of butter (at room temperature)

For the glaze:
100 g powdered sugar
2-3 tablespoons of cocoa
A cube of butter (about the size of a walnut)
3-4 tablespoons of boiling water

Step 1: Preparing the base

Start by preparing the base. Whip the egg whites in a large bowl using a mixer on high speed. When the foam starts to form, gradually add the sugar, one tablespoon at a time, continuing to mix until the sugar is completely dissolved and you achieve a firm and glossy foam.

Carefully add the 3 tablespoons of flour and coconut, gently folding with a spatula to keep the air in the mixture.

Grease a baking tray with butter and flour, ensuring it is evenly coated. Pour the base mixture into the tray and level it with a spatula. Bake in a preheated oven at 180°C for 15-20 minutes, or until the base turns golden. Once baked, remove it from the oven and let it cool.

Step 2: Preparing the cream

Meanwhile, you can prepare the cream. In another bowl, mix the egg yolks with the sugar, vanilla sugar, the 4 tablespoons of flour, and 250 ml of milk. This mixture will form a creamy base. Pour the mixture into the boiling milk (100 ml) and continuously stir over medium heat until it thickens, being careful not to let it stick to the bottom of the pot. Once the cream has thickened, remove it from the heat and let it cool.

After the cream has cooled, beat the butter (which should be soft) until creamy and gradually add it to the cooled cream, mixing well to achieve a smooth texture.

Step 3: Assembling the cake

Spread the cream evenly over the cooled base and level it with a spatula. Cover the cake with plastic wrap and refrigerate for a few hours, preferably overnight, so that the cream sets.

Step 4: Preparing the glaze

For the glaze, mix the powdered sugar with cocoa in a bowl. Gradually add the butter and boiling water, stirring until you achieve a smooth and glossy mixture.

Pour the glaze over the set cream, ensuring it covers evenly. Return the cake to the refrigerator for a few hours so that the glaze sets.

Step 5: Serving

Once the glaze has set, you can slice the cake. A delicious suggestion is to sprinkle coconut on top for an extra touch of flavor and texture. This cake is perfect for serving at a festive meal or simply to indulge after a long day.

Useful tips:

- Make sure all ingredients are at room temperature before starting the preparation. This will help achieve a finer texture.
- You can vary the recipe by adding chocolate chunks or candied fruits to the butter cream for extra flavor.
- If you want a more intense glaze, you can add a little rum or vanilla essence to the cocoa mixture.

Enjoy this coconut cake, a dessert that will bring a smile to the faces of your loved ones!
