To prepare a delicious cherry cake, it is essential to gather all the necessary ingredients and carefully follow the steps in the recipe. Start by collecting the ingredients: sunflower oil, sugar, water, flour, fruit jam (preferably apricot or peach), crushed nuts, cocoa, rum, salt, baking powder, and baking soda. In a large bowl, add the oil and sugar, mixing them well until the sugar starts to dissolve. Then, gradually pour in the water, continuing to mix to achieve a uniform composition. At this point, it is time to incorporate the flour, jam, crushed nuts, cocoa, rum, salt, as well as the baking powder and the activated baking soda. Mix all the ingredients using a spatula or a mixer until you obtain a homogeneous and slightly thicker composition.

While the mixture is homogenizing, prepare the molds or the baking tray. Grease each mold with oil, ensuring it is evenly coated, then dust them with flour to prevent the cake from sticking. An alternative is to use parchment paper, which will make it easier to remove the cake after baking. Once the molds are ready, pour the mixture into each mold, filling them to about two-thirds of their capacity. This will allow the cakes to rise beautifully in the oven. On top, add the cherries, which will provide a tangy flavor perfectly balanced with the sweetness of the cake.

If you prefer to use a larger tray, you can pour all the mixture into a single tray, adding the cherries on top. After you are done, preheat the oven to 180 degrees Celsius and place the molds or tray in the oven. The cakes will need about 30 minutes to bake. To check if they are done, use a toothpick: if it comes out clean from the cake, it means it is perfectly baked. After removing them from the oven, let them cool slightly before removing them from the molds or cutting them, then enjoy them with a cup of tea or coffee.
