Lemon cake
To prepare a delicious lemon-flavored cake, the beginning is essential. First, it is recommended to preheat the oven to a temperature of 180 degrees Celsius, to ensure that the dough bakes evenly and achieves a perfect texture.
In a large bowl, add room temperature margarine, along with granulated sugar, a pinch of salt, grated lemon zest, and vanilla sugar. Use an electric mixer to combine these ingredients, mixing until the mixture becomes smooth and fluffy. It is important that the margarine is well incorporated with the sugar to achieve an airy cake.
Once you have obtained a fine cream, add the eggs, one at a time, continuing to mix after each addition. This step is essential because the eggs help structure the cake while also providing natural moisture. Once the eggs are fully integrated into the mixture, you can add the milk. Mix again until you achieve a uniform dough that has a slightly liquid consistency.
In another bowl, sift the flour together with the baking powder. This will prevent lumps from forming in the dough and will help the cake rise during baking. Start adding the flour mixture gradually to the wet mixture, stirring with a spatula or using the mixer on low speed, so as not to incorporate too much air, which could lead to a dense texture.
Once you have obtained a homogeneous dough, grease a loaf pan with margarine and dust it with a little flour, making it easier to unmold the cake after baking. Pour the dough into the pan and place it in the preheated oven. Bake for about 50 minutes at medium heat, or until a toothpick inserted into the center of the cake comes out clean.
While the cake is baking, you can prepare a delicious glaze made of margarine, powdered sugar, and lemon juice. Place the ingredients in a small saucepan and let them simmer on low heat, stirring constantly until you achieve a creamy and glossy consistency. After the cake is baked, remove it from the oven and let it cool for a few minutes. Then, pour the lemon glaze over the cake, allowing it to drip down the sides.
Let the cake cool completely before removing it from the edges. Place the cake on a platter, and now it is ready to be enjoyed alongside a cup of tea or coffee. The flavors of lemon and vanilla, combined with the fluffy texture of the cake, will delight anyone who tastes it. Enjoy!
