Ingredients:
- 4-5 fresh eggs
- 300 g cheese (choose your favorite cheese, for example, cottage cheese or telemea)
- A large bunch of fresh nettles
- 1 white onion
- 2-3 cloves of garlic
- A bunch of fresh dill
- White pepper, to taste
- Oil for sautéing
- Salt, to taste

Step 1: Preparing the nettles
Start by cleaning the nettles from their stems. This step may seem tedious, but it's worth the effort! Then wash them in several waters to ensure no sand remains. Remove the nettles by hand from the water to keep the sediment at the bottom of the bowl.

Step 2: Boiling the nettles
Put a pot of water on the stove and add your favorite spices (salt, pepper, bay leaves) to flavor the water. When the water starts to boil, add the nettles and boil for about 10 minutes. After boiling, strain and chop them finely.

Step 3: Sautéing the onion and garlic
In a pan, heat a little oil and sauté the finely chopped white onion until it becomes translucent. Add the crushed garlic and cook for a few more minutes. Finally, add the chopped nettles and a little of their cooking water. Let everything simmer together for 10 minutes, stirring occasionally.

Step 4: Preparing the egg mixture
Beat the egg whites with a pinch of salt until frothy. In a separate bowl, mix the yolks, then combine them with the beaten egg whites. Add the chopped dill, pepper, and crumbled cheese. Mix well until you obtain a homogeneous mixture.

Step 5: Baking the roll
Line a baking tray with parchment paper and pour in the egg mixture. Bake in a preheated oven at 180°C for 15 minutes, or until the roll is firm to the touch. Use the toothpick test to check if it is baked.

Step 6: Rolling
Remove the roll from the oven and carefully turn it onto another sheet of baking paper. Lightly moisten the paper stuck to the omelet with cold water so that it peels off more easily. Immediately roll the roll while it is warm, allowing it to cool down.

Step 7: Filling and cooling
After it has cooled, carefully unroll the roll and fill it with the nettle mixture, ensuring it is well drained. Roll it up again tightly and wrap it in cling film or aluminum foil. Refrigerate for a few hours.
