Croissants with Quince Jam
In a larger bowl, gather the essential ingredients to create a fluffy and aromatic dough. Start by sprinkling the flour, ensuring it is of the best quality, to achieve a perfect texture. Make a well in the center of the flour, like a small crater, and add the dry yeast, sugar, and a pinch of salt. The sugar will help activate the yeast, while the salt will balance the flavor. Gently warm the milk so that it is lukewarm, not hot, and gradually pour it into the well of flour. Begin kneading the dough with a wooden spoon or your hands until the ingredients combine.
Once you have a homogeneous mixture, add the two beaten eggs, the grated orange zest for a tempting citrus aroma, and the melted butter, which will add extra finesse to the dough. Continue kneading, using your strength and energy, until the dough becomes elastic and easily pulls away from your hands. This kneading process is essential for gluten development and for achieving a fluffy final product. After about 10-15 minutes of kneading, cover the bowl with a clean towel and let the dough rise in a warm place, away from drafts, for about 30 minutes, until it doubles in volume.
Once the rising time has passed, take the dough and place it on a work surface sprinkled with a little flour. Tear off pieces of dough and form balls, which you can roll out with a rolling pin until you get thin sheets. Cut these sheets into triangles. At the base of each triangle, add a teaspoon of quince jam, with a sweet and tangy taste that will provide a special flavor to the dish. Roll the triangle, starting from the base, until you reach the tip, forming a mini-croissant. Carefully place them on a baking tray lined with parchment paper, making sure to leave enough space between them to allow for expansion during baking.
For a glossy and golden appearance, brush each piece with a beaten egg yolk using a pastry brush. Preheat the oven to a medium temperature, around 180 degrees Celsius, and place the tray with your treats inside. Let them bake for 20-25 minutes until they become golden and fluffy. Once they are ready, take them out of the oven and let them cool slightly on a rack. Then, enjoy them warm, as a perfect indulgence for breakfast or as a delicious snack at any time of the day.
