- 2 tablespoons oil
- 1 bunch of lovage (fresh or frozen)
- 3 tablespoons rice
Preparing the meatball soup:
1. Preparing the vegetables: Start by washing and peeling all the vegetables. The carrots, celery, parsnip, and onion should be finely chopped. You can use a sharp knife or a food processor to save time.
2. Boiling the vegetables: In a pot of about 4 liters, add water up to one-third of its capacity. Place the pot over medium heat and, once the water starts to boil, add the chopped vegetables. Cover the pot with a lid and let the vegetables boil for 15-20 minutes until they become slightly tender.
3. Preparing the meatballs: In a large bowl, place the ground beef, salt, pepper, one egg, chopped dill, and one tablespoon of rice. Mix the ingredients well with wet hands, forming a homogeneous mixture. It's important to use fresh, good-quality meat, as the flavor of the soup will depend on it.
