To prepare these delicious meat rolls filled with mushrooms and cheese, we start by preparing the necessary ingredients. The first step is to soak the toothpicks in cold water, allowing them to hydrate until we use them. This step is essential to prevent the toothpicks from burning during baking, thus ensuring a flawless presentation of the final dish.

The meat, preferably pork or chicken, is cut into thin, elongated slices, which are then lightly beaten with a meat mallet to make them more tender. Seasoning is an important step; we add salt and pepper to taste, but we can also add other spices such as sweet paprika or herbs, depending on preferences. The mushrooms, choosing fresh ones, are carefully washed and the stems are removed to prepare them for filling.

In a separate bowl, we mix the grated telemea cheese with a teaspoon of cumin, which will add a special flavor to the dish. Cottage cheese or feta cheese can also be used, depending on preferences. Once we have prepared all the ingredients, we move on to assembling the rolls. We choose four slices of meat, which we arrange in a cross shape, making sure they are large enough to wrap around the stuffed mushroom.

In the center of the cross formed, we place a mushroom filled with the cheese mixture and add 2-3 onion scales, which will provide extra flavor and texture. Now, we lift the slices of meat one by one over the mushroom, carefully wrapping it to form a well-sealed roll. To ensure the roll does not come apart during baking, we pierce each roll with two toothpicks, placed in opposite corners.

After we have completed the entire operation, we place the rolls in the baking tray, adding oil and enough water to reach halfway up the rolls. This will allow for even cooking and help achieve a juicy texture. We preheat the oven to medium temperature and let the rolls bake until they become golden and browned, and the delicious aroma will spread throughout the kitchen, preparing us for a memorable meal. Finally, we serve the rolls hot, alongside a side of vegetables or a fresh salad, to perfectly complement this savory dish. Bon appétit!
