This recipe is not only delicious but also versatile, offering the possibility to experiment with different fillings. Additionally, it is ideal for a family meal or a dinner with friends. Here’s how to prepare this delight step by step.
Preparation time: 15 minutes
Baking time: 30-35 minutes
Total time: 50 minutes
Servings: 4
Ingredients:
- 4 medium zucchinis
- 300 g minced meat (you can use beef, chicken, or turkey)
- 100 g rice (preferably long-grain rice)
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 large tomatoes, diced (or 400 g canned tomatoes)
- 100 g cheese (preferably mozzarella or feta), diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh herbs (parsley or basil), for garnish
Instructions:
1. Preparing the zucchinis: Wash the zucchinis under cold running water, being careful not to cut or peel them, as they can absorb water. Cut off the ends of the zucchinis and then slice them in half lengthwise. Use a spoon to scoop out the flesh, leaving about a 1 cm border.
2. Preparing the filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until translucent. Add the minced meat and cook until golden. Stir in the rice and tomatoes, mixing well. Add salt and pepper to taste. Cover the skillet and let it simmer on low heat for 10 minutes, stirring occasionally.
3. Filling the zucchinis: Fill the zucchini halves with the meat and rice mixture, sprinkling cheese cubes on top. Place the stuffed zucchinis in a baking dish.
4. Baking: Preheat the oven to 180°C. Cover the dish with aluminum foil and bake the zucchinis for 20 minutes. Then, remove the foil and leave them in the oven for another 10-15 minutes until they are golden and the cheese melts beautifully.
5. Serving: Remove the zucchinis from the oven and let them cool slightly. Garnish with fresh herbs before serving. This stuffed zucchini recipe can be enjoyed warm or at room temperature.
Helpful tips:
- You can experiment with different types of fillings, using vegetables, sautéed mushrooms, or even a vegetarian version with lentils.
