To prepare a delicious lentil puree, we start by selecting the right lentils, preferably green or red lentils, which have a texture and flavor that are excellent for this dish. First, we rinse the lentils under a stream of cold water to remove impurities. Then, in a large pot, we add the washed lentils and enough water to cover the lentils by about two fingers.

We peel a fresh carrot and cut it into rounds or cubes to add to the pot to enrich the flavor of the puree. We place the pot over medium heat and add a teaspoon of salt and a bit of freshly ground pepper to provide a balanced taste. We boil the lentils for about 30 minutes, stirring occasionally, until they become soft and easy to mash. It is important to check the consistency of the lentils, as each type of lentil may have a slightly different cooking time.

Once the lentils are cooked, we drain them well, ensuring we remove all the water, as we want to achieve a smooth paste. We transfer the lentils to a food processor, where we will add extra virgin olive oil, pouring it in gradually. This will help create a creamy and rich texture. It is important to mix well so that the oil is evenly incorporated.

Next, we add garlic, which can be crushed or finely chopped, depending on preference. Garlic adds an intense and aromatic note to the dish, so we need to ensure it is evenly distributed. We continue to blend until we obtain a fine and velvety paste, which can be further flavored with fresh herbs such as parsley or thyme for an extra touch of freshness.

Finally, we taste the puree and adjust the seasonings, adding, if necessary, a splash of lemon juice to add acidity and balance the flavors. The lentil puree can be served as a side dish, accompanying meat or fish dishes, or enjoyed as a vegetarian main course alongside a fresh salad. This recipe is not only simple but also full of nutrients, offering a healthy and comforting meal.
