Total time: 40 minutes
Number of servings: 8-10 slices
Welcome to my kitchen! Today I will share a recipe for homemade bologna, perfect for kids and not only. This recipe won the Click Pofta Bună contest, and its delicious aroma and fine texture make it an ideal choice for breakfast or a snack. Let's get started!
Ingredients:
- 800 g pork or chicken (the choice is yours, but chicken is easier to digest)
- 4 slices of bread (preferably whole grain for added nutrients)
- 1 cup of milk (can also be plant-based milk for a vegan option)
- 1 sparkling water (helps achieve a fluffier texture)
- Salt (to taste)
- 1 teaspoon of baking soda (helps aerate the mixture)
- Spices to taste (pepper, sweet or hot paprika, oregano - choose what you like most)
- 2 eggs (for a richer consistency)
- Greens (fresh parsley, finely chopped)
- 1 small cup of oil (to improve texture)
- Mushrooms, olives, or bell peppers (for filling, optional)
- Plastic wrap
- Aluminum foil
Preparation:
1. Prepare the meat: Start by chopping the pork or chicken. Use a food processor to achieve a fine texture, but don't over-blend, as you want to keep some of the meat's texture.
2. Soak the bread: In a separate bowl, soak the 4 slices of bread in milk. Let them sit for a few minutes to soak well. This will help achieve a moister and fluffier mixture.
3. Mix the ingredients: After the bread has soaked, add it to the bowl with the meat. Add the eggs, baking soda, salt, preferred spices, and oil. Use a hand mixer or food processor to blend everything together. If the mixture is too thick, you can gradually add sparkling water until you achieve a smooth paste, but not too soft.
4. Add optional ingredients: Now is the time to include the chopped mushrooms, olives, or bell pepper, depending on your preferences. These ingredients will add extra flavor and texture to the bologna.
5. Form the rolls: Place a piece of plastic wrap on the work surface and put a portion of the meat mixture along the length of the wrap. Spread it evenly and add the filling on top. Twist the wrap to form a tight roll, making sure the ends are well sealed.
6. Wrap the rolls: After forming the rolls, wrap them in aluminum foil. This step will help maintain their shape and juiciness during cooking.
7. Boil the rolls: In a larger pot, add cold water and place the rolls in the water. When it starts to boil, let them simmer for 30 minutes. This step is essential for cooking the bologna evenly and keeping it juicy.
8. Cool and serve: After 30 minutes, remove the rolls from the water and allow them to cool. This step allows the flavors to meld and become more intense. Once cooled, you can slice the rolls for serving.
Practical tips:
- Choose the meat carefully: If you want a leaner bologna, choose chicken. If you prefer something richer in flavor, pork is the ideal choice.
- Use your favorite spices: Don't hesitate to experiment with different spices. A combination of garlic powder and sweet paprika can add a unique flavor.
- Varied fillings: You can try various fillings, such as green olives or sun-dried tomatoes, to add a touch of originality.
