Mimosa Cupcakes
To prepare the delicious fruit and whipped cream cupcakes, we start by gathering all the necessary ingredients. It is essential that the butter is soft, so it can easily be mixed with the sugar. In a generous bowl, we put the soft butter and sugar, then use a mixer or spatula to mix until we obtain a smooth and fluffy cream. This is the perfect base for the cupcakes, which will give them a fine and inviting texture.
Once the butter and sugar are combined, we add the eggs one at a time, mixing well after each. The grated lemon zest adds a fresh and aromatic note, contributing to a balanced flavor. Then, we pour in the milk, continuing to mix until all the ingredients are well incorporated. Finally, we add the flour, which has been previously mixed with baking powder, and mix gently, being careful not to form lumps.
We prepare the muffin tins by greasing them with butter and dusting with flour to prevent the batter from sticking. We fill each mold with the obtained mixture, making sure to leave a little space for them to rise during baking. We preheat the oven to 180 degrees Celsius and place the molds in for about 20 minutes, or until they turn golden and pass the toothpick test.
After the cupcakes are baked, we let them cool on a rack. When they are completely cool, we use a knife or spoon to scoop a little in the middle, creating a small hollow. The scooped-out part turns into crumbs, which we keep on a plate.
In the meantime, we take care of the whipped cream. We whip the cream until we obtain a firm and fluffy texture. We divide it into two equal portions, and in one of them, we add our favorite fruits. I chose kiwi, but you can also use pineapple, bananas, or any other fruits you like. This whipped cream and fruit mixture will fill the cupcakes, bringing a touch of freshness and flavor.
We fill each cupcake with the whipped cream and fruit mixture, and with the remaining whipped cream, we decorate the top, forming a delicious and appetizing volcano. To finish, we sprinkle the crumbs on top, giving it a mimosa look, the flower that symbolizes spring and is lovingly offered on International Women’s Day. These cupcakes are not only a treat for the taste buds but also a true visual delight, perfect for any special occasion. Enjoy!
