Cherry Ice Cream
Pitted sour cherries are a wonderful ingredient for a delicious dessert recipe, and preparing it becomes a true pleasure. We start by placing the cherries in a saucepan, along with granulated sugar and pectin. These ingredients are mixed well and brought to a boil over medium heat. It is important to boil them for about five minutes to allow the cherries to release their natural juice and form a delicious syrup. This syrup will add an intense flavor to our dish.
Meanwhile, we take care of the egg mixture. The eggs and sugar are placed in a heat-resistant bowl, then set over a water bath. It is essential to constantly whisk this mixture until it becomes frothy and doubles in volume. This technique will bring an airy and fine texture that will significantly enhance our dessert.
Once the egg mixture is ready, we focus on the whipped cream. It is whipped until frothy, being careful not to turn it into butter. The cream needs to be well aerated to contribute to a slightly fluffy consistency of the dessert. Now, we gently add the egg and sugar mixture, vanilla essence for extra flavor, and the drained cherries from the previously formed syrup. We mix with a spatula, being careful to preserve the air in the cream to achieve a final result that is as light as possible.
After obtaining a homogeneous mixture, we transfer it to containers and place it in the refrigerator. It is recommended to let this mixture cool and set for at least four hours. This step is essential as it allows the flavors to develop and blend harmoniously. After four hours, we take the containers out of the refrigerator and mix them well using a food processor. This process will add extra aeration and transform the dessert into a creamy and fluffy delicacy.
Once we have the desired mix, the dessert is kept in the refrigerator, ready to be served. It can be enjoyed plain or alongside some crunchy cookies for a contrast of textures. This is a recipe that will surely impress anyone, being ideal for a special occasion or simply to indulge yourself on warm summer days. The final dish combines the sweet-sour taste of the cherries with the delicacy of the cream and the richness of the eggs, offering an unforgettable tasting experience.
