Fluffy Fruit Cake
To prepare a delicious and fluffy cake, we will start by ensuring that all the ingredients are at room temperature. In a large bowl, add the fresh eggs, granulated sugar, sour cream, and a pinch of salt. Using an electric mixer, beat the ingredients at medium speed until the mixture becomes smooth and fluffy, with a creamy texture. It is essential to obtain a well-incorporated foam, as this will help aerate the cake.
Next, sift the flour into another bowl along with the baking powder and vanilla, being careful to eliminate any lumps. This step is crucial, as sifting the flour will ensure a lighter and better-aerated cake. Gradually add the flour mixture to the bowl with the eggs, gently mixing with a spatula to avoid losing the incorporated air. The mixture should be smooth, but it should not be over-mixed.
Now we prepare the baking pan. A round pan with a diameter of 24-26 cm can be lined with parchment paper or greased with butter and then sprinkled with flour to prevent the cake from sticking. It is recommended to ensure that all corners are well covered to facilitate the removal of the cake after baking.
Once the mixture is ready, pour it into the prepared pan, being careful to level it evenly. This is where the creative part comes in: we can add fresh fruits such as strawberries, raspberries, blueberries, or even pieces of apple or peach, all washed, drained, and cut into small pieces. The fruits will not only add a delicious flavor but will also provide a contrasting texture to the cake.
The pan is placed in a preheated oven at 180 degrees Celsius, where the cake will bake for about 40 minutes. It is important to monitor the baking process and test with a toothpick: if it comes out clean, the cake is ready. After baking, remove it from the oven and let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
Once the cake has cooled, we can opt to dust it with powdered sugar, adding a touch of elegance and sweetness. Then, cut it into generous portions and serve with a smile, either alongside a scoop of ice cream or simply as a delicious snack with tea or coffee. This cake is perfect for any occasion and will bring a touch of joy to every meal.
