Buckwheat is a versatile and healthy ingredient that adds a unique flavor to dishes. Once the buckwheat is well washed, we drain it and transfer it to a deep bowl. Here, we pour boiling water over the buckwheat, mix gently, and let the mixture sit for 10 minutes. This step is essential for the buckwheat to absorb the water and become fluffy.

After 10 minutes, we add crushed garlic, salt, pepper to taste, and optionally, some dried herbs like parsley or basil, which will enhance the aroma of the dish. We mix well to ensure that all ingredients are evenly distributed. Once the buckwheat is ready, we pour the mixture into a deep baking tray.

Now we move on to preparing the chicken thighs. We wash the thighs well and season them with salt, pepper, paprika, and again, a little parsley. When everything is ready, we take the tray out of the oven and let the dish cool for a few minutes. We carefully portion out one chicken thigh and one serving of buckwheat on a plate, sprinkling some fresh parsley on top for an extra touch of color and flavor.
