- 500 ml whipped cream (plus 100 ml for decoration)
- 3 tablespoons lemon juice
- 2 bananas

Step by step:
1. Preparing the base: In a bowl, beat the eggs with the sugar until you get a fluffy and light-colored foam. Add the flour, starch, and baking powder, gently mixing with a spatula to keep the air in the mixture. This step is essential for a fluffy base. Line a baking pan with parchment paper and pour in the mixture. Bake in a preheated oven at 180°C for about 25 minutes or until the base passes the toothpick test. After baking, let it cool completely.
2. Preparing the cream: In a small pot, add the gelatin to a little water, allowing it to swell. Then, heat it over low heat without letting it boil, until it completely dissolves. Let it cool. In another bowl, combine the yogurt with the powdered sugar, vanilla sugar, and lemon juice. Add the dissolved gelatin and mix well. Finally, fold in the whipped cream, being careful not to let it collapse. Keep a small portion of the cream for decorating the cake.
3. Assembling the cake: Prepare a cake mold lined with plastic wrap. Cut the cooled base into 3 layers. Place the first layer in the mold, soaking it with a syrup made of water and sugar if you desire an extra touch of moisture. Cut one banana lengthwise and place it on the layer, sprinkling cocoa over it. Add half of the cream, followed by the second layer, which you soak again. Repeat the process with another banana, cocoa, and the remaining cream. Finish with the last layer, soaking it and adding the reserved cream on top.
4. Cooling: Cover the cake with plastic wrap and let it chill in the refrigerator for at least 4 hours, ideally overnight, for the cream to set.
