Jerbo Cake
To prepare a delicious walnut cake, we will start with the essential ingredients for the dough. A bread machine can be used, selecting program 8 for kneading, or we can do this manually. In a large bowl, we combine flour, yeast, a pinch of salt, sugar, and warm milk. We knead the dough well until it becomes elastic and homogeneous, then let it rise in a warm place, covered with a clean towel, for about 30 minutes.
In the meantime, we take care of the filling. In another bowl, we mix the ground walnuts with 100 g of sugar, cinnamon, and rum essence. This combination will add a sweet and fragrant aroma to our cake. After the dough has risen and doubled in volume, we divide it into four equal parts. Each part will be rolled out into a thin sheet, making sure it is not too thin to support the filling.
The first rolled sheet is placed in the baking tray lined with parchment paper. On this, we spread a generous layer of jam, preferably apricot or raspberry, to add a note of freshness. Over the jam, we sprinkle a third of the walnut mixture, ensuring it is evenly distributed. We continue with the next sheets, repeating the process: sheet, jam, walnut, until the last sheet, which we will prick with a fork to allow steam to escape during baking.
The tray with the cake is placed in the preheated oven at medium temperature, where it will bake for about 40 minutes. It is essential to watch the cake so it does not burn, and when it turns golden, we can take it out. After baking, we let the cake cool slightly, making it easier to glaze.
For the glaze, in a pot over heat, we combine water, sugar, cocoa, and butter, stirring constantly until the mixture starts to boil and thickens slightly. We glaze the cake with this cocoa mixture, giving it a shiny and appetizing appearance. Alternatively, if you prefer a creamier taste, you can use Nutella, which will add a rich flavor.
Once the glaze has set, the cake is ready to serve. Cut into pieces and enjoy every bite full of flavor and tradition, bringing joy to loved ones. This walnut cake will surely become a favorite in family recipes.
