Ingredients:
- 250 g cottage cheese (you can also use feta cheese for a saltier taste)
- 100 g sugar
- 2 eggs
- 100 ml oil (or melted butter for a richer flavor)
- 1 packet of baking powder
- 1 teaspoon of vanilla essence
- 500 g flour
- A pinch of salt
- Filling of your choice (ground nuts, cocoa, fruit jam, or raisins)

Preparing the dough:
1. In a large bowl, add the cottage cheese, sugar, eggs, oil, baking powder, vanilla essence, and a pinch of salt. Mix the ingredients well with a spatula or a mixer on low speed. It’s important not to overmix to avoid a dense dough.

2. Gradually add the flour, mixing with a spatula until the dough becomes homogeneous. If it’s too sticky, you can add a little more flour.

3. Place the dough on a floured working surface and shape it into a ball. Cover it with a towel and let it rest for 10 minutes.

Shaping the pastry:
4. After the dough has rested, roll it out with a rolling pin into a rectangular sheet, about 1 cm thick. Make sure the working surface is well floured to prevent sticking.

5. Evenly distribute the chosen filling over the entire surface of the dough. If you choose ground nuts, you can mix them with a little sugar and cinnamon for a more intense flavor. If you prefer cocoa, mix it with sugar before sprinkling.

6. Carefully roll the dough starting from one side, forming a tight roll. Make sure the filling doesn’t spill out during this step.

Baking the pastry:
7. Preheat the oven to 180°C. Place the pastry in a baking tray lined with parchment paper. If desired, you can brush it with a beaten egg for a golden crust.

8. Bake the pastry in the preheated oven for 30-35 minutes or until golden and passes the toothpick test.

Serving:

For the filling, the recipe calls for: 200 g marzipan, 125 g plum jam. Both are mixed well and used as filling, but I used ready-made poppy seeds; you can also use apples but not cooked beforehand, or whatever you prefer. For greasing = condensed milk (I didn't have it, I greased with regular milk).
