In a world full of sophisticated desserts, sweet cheese and raisin pie remains a classic that reminds us of the simple and beautiful moments of childhood. This refreshing recipe is not only easy to prepare but combines the delicate flavors of cheese with the sweetness of raisins and a hint of vanilla, creating an unforgettable culinary experience. Let’s begin our culinary journey to create a delicious pie that will turn any meal into a celebration!

Ingredients:

For the dough:
- 20 tablespoons warm water
- 18 tablespoons sunflower oil
- 1 cube of fresh yeast (or 1 packet of dry yeast)
- 3 tablespoons sugar
- a pinch of salt
- 350 g flour

For the filling:
- 650 g cottage cheese (well drained)
- 2 tablespoons sour cream
- 1 cup sugar
- grated zest of one orange
- 3 packets of vanilla
- 1 cup golden raisins (about a handful)

For brushing:
- 1 egg yolk
- ¼ cup milk

Preparation Instructions:

1. Prepare the dough
In a large bowl, combine 20 tablespoons of warm water with 18 tablespoons of sunflower oil. Add the 3 tablespoons of sugar and a pinch of salt, mixing well. If using fresh yeast, dissolve it in this mixture. If opting for dry yeast, it can be added directly to the flour later. Let the mixture sit for 10-15 minutes until the yeast starts to bubble.

2. Form the dough
Once the yeast has risen, add the 350 g of flour, mixing vigorously until you obtain a smooth, non-sticky dough. Measure the flour with a spoon and fill the cup, then level it with a knife to avoid overdoing the amount. Cover the dough with a clean towel and let it rise again for 15 minutes.

3. Prepare the filling
In another bowl, mix the cottage cheese with 2 tablespoons of sour cream, 1 cup of sugar, the grated orange zest, and the 3 packets of vanilla. Then add the golden raisins, which will add a sweet note and interesting texture to the filling. Make sure the cheese is well drained to avoid excess moisture.

4. Assemble the pie
After the dough has risen, divide it into two equal parts. On a baking sheet, roll out the first part of the dough, making sure to obtain a rectangular shape. If you prefer, you can do this step directly on the work surface, but the baking sheet is more practical. Place half of the cheese and raisin mixture on the dough, rolling it gently to form a log. Place the roll in the pan, including the baking sheet.

5. Repeat the process
Do the same with the second sheet of dough and filling. Both rolls will create a pie with delicious layers, and the aroma will be simply irresistible!

6. Brush and bake
Preheat the oven to 180 degrees Celsius. In a small bowl, beat the egg yolk with ¼ cup of milk, then brush the rolls with this mixture. This step will give a beautiful color and a crunchy texture to the outside of our pie. Bake the pie for 50-60 minutes, checking from time to time to ensure it browns evenly.

7. Serve and enjoy
Once the pie is baked, let it cool slightly before cutting. It can be served warm or at room temperature, plain or with a spoonful of sour cream on top. It pairs perfectly with a cup of herbal tea or a fragrant coffee.

Useful tips:
- Filling variations: You can experiment with goat cheese or mascarpone for a different texture. Add roasted nuts for an extra crunch.
- Raisins: If you want a more intense fruity taste, try using raisins soaked in rum or wine for a few hours before use.
- Storage: The pie keeps well in the fridge for a few days, but its taste is best fresh out of the oven!

Nutritional benefits:
This sweet cheese and raisin pie is a good source of protein due to the cheese, while the raisins provide a significant amount of antioxidants and fiber. Although it is a delicacy, consumed in moderation, it can be part of a balanced diet.

Frequently asked questions:
- Can I use another type of flour? Yes, you can try whole wheat flour, but you may need a bit more liquid to achieve the right texture.
- How can I make the pie less sweet? Reduce the amount of sugar in the filling, especially if using sweet cheese that already contains sugar.
- Can it be frozen? Yes, the pie can be frozen before baking. Make sure it is well wrapped.

This sweet cheese and raisin pie is not just a delicious dessert but also a wonderful way to evoke pleasant memories and bring joy to loved ones. Enjoy every slice and cherish every moment spent in the kitchen!
