To prepare a delicious stuffed chicken, the first step is to take care of the chicken meat. Start by washing the chicken very well, both inside and out, to remove any impurities. Once cleaned, generously season it with salt and pepper, ensuring that these spices reach all corners, including the inner cavity, to give it an intense flavor.

In a separate bowl, prepare the stuffing. Take a few slices of bread crumb, which you will soak in milk. This step will make the stuffing soft and flavorful. After the bread crumb has soaked, add a bit of melted butter, freshly chopped tarragon (or dried if you don't have fresh), salt, and pepper. Mix all the ingredients with a fork or your hands until you achieve a homogeneous mixture.

Then fill the chicken with the bread crumb mixture, making sure it is well distributed inside so that every bite is full of flavor. Once the chicken is stuffed, generously coat it with oil so that it gets a golden and appetizing crust during baking. Place the chicken in a baking dish, which will retain moisture and help cook it evenly.

Add a glass of water (about 200 ml) to the dish, along with the remaining oil used to coat the chicken. If you wish, you can sprinkle a little dried tarragon on top of the chicken for extra flavor. Preheat the oven to a medium temperature and place the dish with the chicken inside. Initially, cook it over medium heat, then lower the temperature to allow the chicken to cook thoroughly and remain juicy.

As the chicken cooks, it is important to monitor it. When you notice it is almost halfway cooked, use a knife to poke it here and there; this will help release the juices and ensure even cooking. About 15-20 minutes before it is done, add sour cream on top of the chicken. This will create a delicious crust and a creamy flavor.

When the chicken is well cooked and has developed a golden crust from the sour cream, turn off the oven and let it rest for a few minutes. This rest will allow the juices to redistribute, resulting in a juicy and flavorful chicken. Serve it alongside suitable sides, such as steamed vegetables or mashed potatoes, for an unforgettable meal. Bon appétit!
