Muffins
To prepare these delicious muffins, start by gathering all the necessary ingredients: 4 eggs, 150 g of sugar, 300 g of yogurt, 100 ml of oil, 2 tablespoons of honey, 1 packet of baking powder, 400 g of flour, and your favorite filling, which can be made of dried fruits, chocolate, or nuts. Also, make sure you have some muffin molds on hand, but if you don't, you can improvise with aluminum foil, as I did.
Start by separating the yolks from the whites. In a large bowl, beat the yolks with the sugar until the mixture becomes creamy and light in color. This is the moment to add the yogurt, mixing well to achieve a smooth texture. Continue to incorporate the oil gradually, adding it little by little and mixing constantly to avoid curdling.
Once you have a uniform mixture, it’s time to slightly warm the honey, without boiling it, and add it to the bowl. This will provide a pleasant taste and extra moisture to your muffins. In another bowl, beat the egg whites until you achieve a firm foam, then gently fold them into the yolk mixture using a spatula with delicate movements to avoid losing the trapped air.
Next, add the baking powder dissolved with two tablespoons of lemon juice or vinegar, mixing well. Finally, sift the flour and gradually incorporate it into the mixture, stirring gently to avoid lumps. If you wish, now is the time to add your chosen filling, ensuring it is evenly distributed in the batter.
Prepare the muffin molds, whether they are classic or made of aluminum foil. Fill each mold with 2-3 tablespoons of the prepared mixture, being careful to leave a little space to allow the muffins to rise during baking. Preheat the oven to 180 degrees Celsius and place the molds on a tray. Bake the muffins for about 30 minutes, or until they turn golden and pass the toothpick test.
After removing them from the oven, let them cool slightly, then dust them with sugar or add a caramel or chocolate sauce, depending on your preferences. These fine and fluffy muffins are perfect for a hearty breakfast or as a snack between meals. Enjoy them with a cup of tea or coffee, and savor every bite!
