Bavarian with Tomatoes and Goat Cheese
To prepare a delicious and elegant tomato terrine, start by slicing 2-3 fresh tomatoes into very thin rounds, making sure to remove the seeds to avoid excess moisture. These rounds will be the beautiful base of your dish. Line the bottoms of small bowls or cups with parchment paper, ensuring it is well adhered, and then brush them with olive oil, including the sides, to prevent sticking. Carefully arrange the tomato slices around the edges and on the bottom of the bowls. They will provide an attractive appearance and fresh flavor to your dish. Once you are done, place the bowls in the refrigerator to chill and firm up a bit.
In the meantime, prepare the remaining tomatoes. Remove the skin and seeds, then dice them. Finely chop an onion and basil leaves, adding a note of fresh flavor to your dish. In a small bowl, soak the gelatin in cold water so that it becomes flexible and easy to incorporate into the mixture.
In a skillet, add a little olive oil and heat it over medium heat. Add the diced tomatoes, chopped onion, and basil, stirring constantly. Also add the tomato paste, sugar, and let the mixture simmer over medium heat for about 15 minutes, stirring occasionally to prevent sticking. Once the juice has reduced, let the mixture cool slightly, then blend it with a blender until you achieve a smooth puree. Add the squeezed gelatin, crumbled cheese, and season with salt and pepper, mixing well to obtain a uniform composition. Place this mixture in the fridge.
In the meantime, whip the cream until fluffy and carefully fold it into the cooled tomato puree, being careful not to let it deflate. This will add a creamy and airy texture to the dish. Once you have a homogeneous mixture, pour it into the prepared bowls over the tomato slices. Cover them with plastic wrap and leave them in the refrigerator for at least 4 hours to set well and fix the flavors.
When you are ready to serve, carefully invert the terrine onto a plate, removing the parchment paper. Decorate with a few fresh basil leaves and drizzle with a splash of olive oil. Serve this refined dish alongside a fresh green salad for a perfect combination of flavors and textures. This tomato terrine will not only impress with its appearance but will also provide a sublime taste, making every meal a true culinary celebration.
