Meanwhile, for the vanilla cream, use 500 ml of milk, 200 g of sugar, 4 egg yolks, 100 g of butter, and a teaspoon of vanilla essence. The first step in making the mimosa cake is to prepare the base. In a large bowl, beat the eggs with the sugar until you get a fluffy foam, then gradually add the sifted flour and water. Mix gently to avoid losing the air in the composition. Pour the mixture into a baking tray lined with parchment paper and bake at 180 degrees Celsius for about 30 minutes or until the base is nicely browned and passes the toothpick test.

After the base has cooled, you can focus on the cream. In a saucepan, heat the milk with the sugar. In a separate bowl, beat the egg yolks and gradually add them to the warm milk, stirring continuously to avoid coagulation. Cook the mixture over low heat, stirring until it thickens. Once it reaches the desired consistency, remove from heat and add the butter and vanilla essence.

Assembling the cake is a pleasant process. Cut the base into two or three layers, depending on your preferences. Spread a generous layer of cream on the first layer, then place the second layer on top. Continue adding cream on the other layers as well. Finally, cover the entire cake with the remaining cream, and for a special appearance, you can decorate with pieces of fruit, grated chocolate, or coconut.

After 10 minutes, pour the warm milk into the egg yolk cream, then place it over moderate heat, stirring continuously; once it starts to boil, let it cook for a few more minutes, then remove from heat and let it cool. After that, incorporate the whipped cream, mixing gently. In a bowl, mix the liqueur with the milk and with half of the mixture, soak the sponge cake, fill it with cream and set aside a few tablespoons. Cover with the sponge cake lid, and turn it upside down. Soak it with the liqueur and milk syrup, then cover the entire cake with the remaining cream. Sprinkle the remaining sponge cake crumbs over the entire surface. The Mimosa cake should be kept in the refrigerator for 4-5 hours before serving.
