Lela Cake: A Birthday Delight with Ombre Roses

When it comes to birthdays, a spectacular cake is essential to celebrate the beautiful moments in our lives. Today, I will share my special recipe for Lela Cake, an ombre rose cake with a soft walnut sponge and filled with a delicious combination of vanilla cream and berry cream. Decorated with white chocolate letters and wafer flowers, this cake is not just a dessert, but a true culinary masterpiece.

Total preparation time: 2 hours
Baking time: 35 minutes
Number of servings: 18

Ingredients
To create this wonderful cake, you will need the following ingredients:

For the sponge:
- 8 large eggs
- 5 tablespoons sugar
- 5 tablespoons flour
- 4 tablespoons ground walnuts
- 1 packet baking powder
- A pinch of salt

For the vanilla cream:
- 1 package Dr. Oetker vanilla cream
- 3 tablespoons sugar
- 250 ml milk

For the berry cream:
- 1 package Dr. Oetker berry cream
- 3 tablespoons sugar
- 250 ml milk

For the syrup:
- 400 ml water
- 3 tablespoons sugar
- Dr. Oetker vanilla essence

For decoration:
- 200 ml liquid cream
- White chocolate for letters
- Wafer flowers
- Sugar confetti

Step by Step

1. Preparing the chocolate letters
Start with the white chocolate letters. Melt the chocolate in a double boiler or a fondue pot. Once the chocolate is completely melted, pour it into letter molds. Let it cool in the fridge until solidified. This detail will add a personalized touch to your cake.

2. Preparing the sponge
To prepare the sponge, whisk the egg whites with a pinch of salt and sugar until glossy and firm. Add the egg yolks, baking powder, then the flour and ground walnuts. Gently fold in using a spatula to keep the air in the egg whites.

Pour the mixture into a round cake pan lined with parchment paper or non-stick foil. Bake in a preheated oven at 180°C for about 35 minutes. Check if the sponge is done by inserting a toothpick in the center; it should come out clean.

3. Preparing the syrup
Meanwhile, prepare the syrup. In a saucepan, bring the water and sugar to a boil, stirring until the sugar dissolves. Once you turn off the heat, add the vanilla essence and let it cool.

4. Preparing the creams
For the vanilla cream, mix the vanilla cream powder with cold milk and sugar using a mixer until you achieve a creamy consistency. Do the same for the berry cream.

5. Assembling the cake
Once the sponge has completely cooled, cut it into two uneven parts (the base should be thicker than the top). Soak the base with the prepared syrup. Add a layer of vanilla cream, then a layer of berry cream. Place the top of the cake on top.

6. Decorating the cake
To achieve perfect whipped cream, whip the liquid cream until it becomes firm but not too stiff. Use the remaining creams to decorate the cake. Fill one piping bag with vanilla cream and another with berry cream and create roses on the surface of the cake. Use the whipped cream for the roses on the top.

Finish the decoration with the white chocolate letters, wafer flowers, and sugar confetti for a festive look.

Serving and Suggestions
Lela Cake is perfect to be served alongside a cup of aromatic tea or coffee. You can also accompany it with a berry sauce for an extra burst of flavor. If you want to experiment, try adding a layer of berry jam between the sponges for an even more intense taste.
