This shrimp salad is an excellent choice for a quick lunch or a light dinner, offering a fresh taste and an attractive appearance. With simple ingredients and easy preparation, you will create a delicious dish that will impress anyone.
Ingredients:
- 300 g thawed shrimp (preferably large shrimp)
- 1-2 teaspoons of garlic powder (or 2-3 cloves of fresh garlic, finely chopped)
- 2 generous tablespoons of sour cream (you can also use Greek yogurt for a lighter version)
- A handful of fresh chopped parsley
- 1-2 medium tomatoes, diced
- 1 bell pepper (preferably red or yellow for added color), sliced
- 1/2 French baguette or roll, to accompany the salad
- Extra virgin olive oil, for cooking and serving
- Salt and pepper to taste
Instructions:
1. Preparing the shrimp: Make sure the shrimp are well-thawed and drained of excess water. You can pat them dry with a paper towel to remove any moisture. This step is essential to avoid boiling in their own juices.
2. Cooking the shrimp: In a non-stick skillet, add 1-2 tablespoons of olive oil and heat it over low heat. Add the shrimp and sprinkle the garlic powder on top. Cook for about 5-7 minutes, stirring constantly, until they turn pink and opaque. If you choose to use fresh garlic, add it one minute before turning off the heat to avoid burning it.
3. Preparing the sauce: In a separate bowl, combine the sour cream with the chopped parsley. You can also add a splash of lemon juice to enhance the flavors. Add salt and pepper to taste.
4. Assembling the salad: In a large bowl, add the cooked shrimp, diced tomatoes, and bell pepper strips. Pour the sour cream sauce over them and gently mix to combine the ingredients, being careful not to crush the tomatoes.
5. Serving: Slice the baguette or roll and lightly toast them in a skillet or on a grill to give them a special flavor. Serve the shrimp salad on a bed of toasted bread slices for a crunchy texture and a pleasant contrast.
Helpful notes:
- You can vary the recipe by adding diced avocado or Kalamata olives for extra flavor.
- If you prefer a spicier taste, you can add some chopped hot pepper or chili sauce to the sour cream sauce.
- The same dish can also be enjoyed cold, making it perfect for picnics or as an appetizer at a party.
This spicy shrimp salad is not only quick and simple but also full of freshness and flavors, perfect for warm days or for moments when you want to impress with an elegant dish without spending hours in the kitchen. Enjoy it with a glass of dry white wine for a perfect culinary experience!
