Pasta with Breadcrumbs and Plums

 Ingredients: 500 g of wide noodles (I used macaroni in the absence of noodles) a few good tablespoons of breadcrumbs 2 tablespoons of oil (optional... I never add it) 1 tablespoon of oil (once again) salt, a pinch 7-8 tablespoons of powdered sugar 2-3 teaspoons of cinnamon (or more if you like its aroma) grated orange or lemon peel frozen or fresh plums (I had about 500 g) sugar to taste for boiling the plums

To prepare a delicious recipe of pasta with caramelized plums, we start by preparing the necessary ingredients. In a large pot, we add water, a tablespoon of olive oil, and a pinch of salt, then cover with a lid and place over medium heat. We patiently wait until the water starts to boil with an enthusiastic simmer. At that moment, we can add the pasta, choosing our preferred macaroni, which will cook according to our desires. If you prefer an al dente texture, check the cooking time according to the instructions on the package, but don't forget to taste the pasta to ensure it is perfectly cooked.

Meanwhile, in a separate pan, we add the remaining two tablespoons of oil and the breadcrumbs. We heat over medium heat, stirring constantly, so that the breadcrumbs change color and become golden and crispy. This stage will add a savory texture to our dish. Once the breadcrumbs have taken on a pleasant hue, we remove them from the heat and set them aside.

After the pasta is cooked, we carefully drain it and place it over the fried breadcrumbs, gently mixing to homogenize and evenly coat with the crispy breadcrumbs. Now we can focus on preparing the plums. If you are using frozen plums, make sure to thaw them beforehand. If they are fresh, wash them well, remove the pits, and cut them in half. We place the plums in another pot, adding sugar to taste, grated orange peel, and a pinch of cinnamon, which will add a wonderful aroma. We pour in water, just enough to cover the plums, then place the pot over the heat.

We let the plums simmer on low heat, stirring occasionally, until the water evaporates completely, and the plums become soft and slightly broken down. This process will intensify the flavors and turn the plums into a delicious topping for our pasta.

Serving is a special moment! On flat plates, we place the pasta rolled in crispy breadcrumbs, and on top, we add the cooked plums, providing a contrast of textures and flavors. To finish, we sprinkle a little powdered sugar mixed with cinnamon, adding a touch of sweetness and flavor. This dish not only looks wonderful but its taste will delight any palate, being a perfect combination of the savoriness of the pasta and the sweetness of the fruit. Enjoy your meal!
